    Jill. My grandmother uses the same process, but what she does is quarters the tomatoes, cooks them for 1.5 hrs, then pours the "soup" into the machine to separate the skins and seeds. The waste is much less, and the process is quite smooth. I recommend you try it when making your pasta sauce :)

    Don’t waste the pulp! Dehydrate it, powder it and then use it in soups and stews etc for flavouring.

      Do you dehydrate in a dehydrator? Can it be in both that and in the oven? If yes in the oven as well, do you know the times and temps, and do you place it directly on a baking sheet or on parchment paper?

    I love using this method. In reading some of the comments- no there is no waste- just the seeds and peels. Makes the thickest best tasting sauce and juice. No bitterness from the seeds either. I use this for Roma’s and heirloom tomatoes. I also love the Amish paste as well.

    I love how you show clearly how to attach the juicer to the mixer. I have the booklet and it is not clear how to attach the parts. I do better when you show me! Yes, this method saved me a lot of time prepping the tomatoes. So much easier. Thank you!

    hi I am a guy, this is complicated, I use freezer ziplock bags and freeze tomatoes fresh from garden direct to freezer, I do remove green tops I have done roma types, scotian types and beefsteak types. You get softer tomatoes and cracked skin but tomatoes are still good for sauces, paste or ketchup, not good for chunky salsa but plain sauce salsa is good. At times I just get too many tomatoes and needed a quick method to save tomatoes, this worked better than letting them go another week in the garden.

      dpower02, There are two disadvantages of freezing, It hogs up freezer space and when it's time to cook dinner I dont have to wait for them to de thaw, I just pop the top and make my spaghetti sauce .

    Omg! So wish I had this about 2 weeks ago. I think we’ve canned about 1000 tomato things in August. All blanching, skinning. Hell I just left the seed. This is going to be great next season.

      1.5 hrs, cleaned, quartered, and fed thru the strainer, its a super simple process. I just did 60 lbs on Saturday, about the same time frame, got 20 quarts out of them! the drag of the whole thing is the canning, all that jar prepping and sterilizing..i hate that part!

    I wish that I had seen this video when you first posted it! It is a game changer! I put off getting the sieve/strainer attachment because I already had the metal grinder attachment (the sieve/strainer attachment doesn’t work with it.). After my first batch this year, I broke down and purchased both. Yesterday, I did batch 2 with the Kitchen Aid. I was working with a combination of fresh and froze so I cook them first. The fresh get cored and quartered. The frozen (cored before freezing) get dumped in a sink of how water (it cools quickly so the tomatoes are easy to handle). I skin them at this point. The skins easily slip off with almost zero pulp still attached. (I had a few yellow tomatoes that had too much pulp still attached to the skin, so they went in the pot skin and all). After the tomatoes had all softened up, I put them through the strainer. The strained product was beautiful, but I wasn’t thrilled with the waste-it was too wet and had too much pulp for my liking. I ran it through the strainer a second time and was thrilled with both the strained product and the waste. The waste is truly waste and is off to the compost. I’m sold. This “gadget” ( as my husband refers to it), is a winner!

    Same for apple sauce! I just quarter clean apples, skin and all, cook them as per my recipe, and then put the whole thing aside from the cinnamon sticks and other whole spices in the Kitchen Aid fruit strainer... the apple sauce has a beautiful pink hue to it :)

      Just used mine for the first time today. Works like a dream. I am going to take the suggestion here to cook the quartered tomatoes for 1.5 hours and then pour the soup through the attachment...way easier on the machine, I think!

      I'm sure it would be easier on the machine. I did worry about the longevity of the attachment using fresh tomatoes, as it does seem like the mixer works hard. Seven years later, though, it still works great!

    Hi Jill, Thanks for the video. I experimented with my kitchen aid mixer and the attachments. First used frozen tomatoes which I thawed out-way too much water. Second, used fresh (not frozen/thawed) San Marzano plum tomatoes-PERFECT thick sauce. Highly recommend plum tomatoes for a thicker sauce. Regular tomatoes for juice. Many thanks again for a great video.

    • @thebeginnersgarden
      @thebeginnersgarden  3 ปีที่แล้ว

      Thank you for letting me know! I suspected frozen tomatoes would produce too much water, based on my own past experiences with that. Glad to hear they went through the attachment fine, though. I had never tried that. Thanks again for the feedback!

    • @garydutko119
      @garydutko119 3 ปีที่แล้ว

      Jill, I thawed the frozen tomatoes before putting them thru the kitchen aid. However, regular tomatoes that are frozen can be run under hot water and the skins come right off-no blanching required. I start my homemade spaghetti sauce that way.

    You can cut the time even more by freezing the tomatoes as they come in. Then defrost and pour the water off when the batch is big enough.This makes them SO easy to work with, and no watery sauce. I learned about this from Living Traditions Homestead, and I have done it for 2 seasons so far. I used the manual tomato machine, so now I need to get this strainer attachment and only strain the tomatoes, not my arms and hands. Thank you for this video. It is confusing when amazon tries to sell you more parts than you need, and you really helped me out of that.

    Can I share my tried and true method with you? I let the tomato meat fall into a large bowl with a strainer on top. If you let it rest a lot of tomato water will drop through. You end up with tomato meat. I spoon it into a canning jar with a sprig of fresh basil, minced garlic and citric acid. Cans up beautifully.

      @SeikiBrian actually if you run it too fast the extraction is not thorough, and waist aka "carrot " is more wet which make you want to re process it, my screen broke in less then 3 minutes, just not worth the risk. or maybe my screen had a defect but the same cone was used for years, when I reprocessed I could hear the machine laboring and the carrot coming out was bone dry.

    I used to help my mom and did the cut tomatoes, cooked tomatoes, put through a tapered screen using a wood stick to sqeeze all the juice out.... Yea it was a lot of work...
    But I found a much better way...
    1) Chop the tomatoes
    2) Put in the blender and blend till a sauce.... And put it right in the big pot to heat... (Blending already heats it up a little)
    Yes, Use the skin and seeds...
    3) Just heat it up a little longer in a pan... and the "grassy" taste goes away from the skin and seeds and I get a Lot Thicker Sauce!
    4) Put the hot sauce in hot clean jars and seal
    Very Thick and Quick!

    Jill, I am a true beginner. My husband wants tomato juice and I want sauce. My question is what the next steps are the the two things. Boil what you get out to make sauce and can what you get out to have juice? Can I heat jars in the oven and heat the tomatoe juice/sauce and can them that way?

    • @thebeginnersgarden
      @thebeginnersgarden  2 ปีที่แล้ว +1

      I have never made juice, so I'm not sure about that. I would think you'd want to use a sieve of some kind to remove the flesh to get true juice. But yes, for sauce, you do boil down until you get the consistency you want. As far as canning, look up canning recipes from the National Center for Home Food Preservation or a trusted source like the Ball Blue Book (that's what I started with).

    You can reduce your simmering time by straining your sauce then adding back some juice to get the consistency you want. No more simmering for hours and hours and you have tomato juice to can as well.

  • @harrytibbetts282
    @harrytibbetts282 ปีที่แล้ว

    I run the "trash" through a second or even a third time. You'd be surprised how much sauce is left in it after the initial process. One word of caution though; if you try to run it through more than one or two more times the seeds might clog up the cone.

  • @Raiden_N7
    @Raiden_N7 4 ปีที่แล้ว +5

    It seems as a though you get a lot more waste with this method than just running the tomatoes through a traditional food mill. It almost appears that you're juicing the tomatoes and losing a lot of the flesh in the process, rather than just the skins and seeds.

      It depends on the recipe, but the one I use requires 35 minutes for sauce. Be sure to add the correct amount of lemon juice or citric acid and consult with a trusted canning recipe source. (I use the Ball Blue Book mostly.)

    • @thebeginnersgarden
      @thebeginnersgarden  4 ปีที่แล้ว

      The mixer itself I use for all sorts of baking and cooking, but you may be actually referring to the attachment itself. I have used it to crush muscadines (like grapes) to get the skin off and produce juice for jelly. Also, this particular attachment can grind meat, so I've used it to take chicken breasts and turn it into ground chicken. There are other uses, but those are the main ones for me. The user manual (usually posted online) gives instructions for what can and can't be used in the strainer.

    • @thebeginnersgarden
      @thebeginnersgarden  5 ปีที่แล้ว

      I bought it as one complete set. If you already own the meat grinder, it is my understanding that you can purchase the strainer set only to attach to the grinder. (The grinder alone doesn't strain.) But if you don't have the meat grinder, you'll have to purchase the complete set. Hope that makes sense.

      I put it in the dishwasher, but tomato bits still remain. So now I use a scrub brush and run it down the length of the strainer. Sometimes I do it before putting in the dishwasher, and sometimes I use it after. It only takes a few seconds to clean that way.

    Hi. Thanks for the vid. I love tomato juice and my mom said she has tons of tomatoes this year so I was thinking of buying this (I already have the professional and grinder)
    My mom is a traditionalist and cuts, blanches then puts the tomatoes through some kind of huge cone shaped sieve to normally make tomato juice. It's a huge amount of work. Do u think this makes good juice? Could we follow what u did and not skin and blanch? How does the tomato juice get thick? Thanks for any advice. Rod

    • @thebeginnersgarden
      @thebeginnersgarden  8 ปีที่แล้ว +1

      Hi, yes, this should make juice equivalent to what you've done the other way. Inside the Fruit/Vegetable Strainer attachment is a sieve-like part, which I assume would serve the same purpose as the cone-shaped sieve to which you are referring.
      Although I make sauce from this juice (and therefore haven't tried the juice myself), I don't see why this method would be any different.
      Yes, by using this, you can skip the skinning and blanching, as this attachment takes those steps out of the process. (For larger tomatoes, I do cut some of the tough cores out, though.)
      Here is the link to the attachment I use: www.amazon.com/KitchenAid-Grinder-Fruit-Vegetable-Strainer/dp/B00004SGFJ/ref=sr_1_2?ie=UTF8&qid=1472418578&sr=8-2&keywords=kitchen+aid+fruit+vegetable+strainer+attachment

      +Journey with Jill in the Garden
      Hey so my mom and I tried the strainer for the tomato juice. It was absolutely fantastic! We were both amazed at how easy it was and how much juice we got out of the tomatoes. (It was actually too thick so she added a bit of water while simmering it) I put the "waste" through a second time and got even more juice and ended w less waste that was quite dry which means we got most of the liquid out. It's delicious...exactly how I like it. So we did it w raw tomato like u suggested and cut out the first boil and de-skin.
      My mom told me after that she was thinking I was crazy when I brought the strainer to her house but now, she'll never do tomatoes the "hard way" ever again. In fact she said that I can't take the strainer home. She kept it and paid me for it!
      A huge thank you to you for sharing this vid! I likely wouldn't have bothered trying this if not for you. Do u use the strainer for anything else?
      Cheers! Rod

    • @thebeginnersgarden
      @thebeginnersgarden  8 ปีที่แล้ว +8

      I'm so happy to hear that this worked well for you! And putting the waste a second time through was genius! I'll have to try that sometime!
      I've used the strainer successfully with muscadines when making muscadine jelly. I believe it could be used with grapes as well, provided they are seedless. The seeds in grapes are too large for the attachment. (I think those stipulations are mentioned in the owner's manual.)I've also used this to grind chicken, using the included meat grinder disc. I was pleased with the results, and I'm sure it could be used for turkey as well. And I believe there are other suggestions in the owner's manual.So glad this worked for you! Thanks for sharing!
