I am one of the evil professionals cited below. Most information in this video is correct and it is useful for the people at home. The things I would like to correct, though : 1. mushrooms are 100 % mycelium. The stems are fuzzy, but so are the caps if you keep them in the fridge for a while. They grow, but much slower than professional spawn. Still, it works. In other words: you could use all parts of the mushroom as inoculum, not just the butts. 2. it works better in my opinion to throw the butts in, close the jar, shake the jar and let it grow. No need to 'plant' them, these are not celery roots, they are fungi. Gravity is not as important as with plants. 3. alcohol is not efficient. It kills live fungi and bacteria, but only if it gets enough time AND it does not kill any fungal spores. I would not wipe everything down with alcohol, I would boil the pots, plates, etc. Wiping down hands and table is a good idea. Flaming tools is better than alcohol. 4. the filter up top: alcohol is not a good idea. 5. General hint: keep the time of infection limited and do this in a 'clean area'. Still, thanks for sharing.
What do you think about a diluted HCl solution for a wipedow of the counters? Its a little difficult to get hold of 90% isopropyl without a permit where I'm from. I'd probably sterilize the other stuff by boiling though.

Where are you that you need a permit for isopropyl alcohol? In the US, it’s over the counter most commonly up to 90% and 99% can be easily found in hardware stores. and in hand sanitizers, unless they have over a 70% alcohol content, they aren’t even effective against c-diff and other harmful bacteria.
I find this so odd. In the mountains above Boulder, Co I grew pounds upon pounds of oyster mushrooms. They were so prolific I was taking bags of them to work to pass around to whomever would take them. They came back for several years, although not as heavily, until they finally gave up the ghost. All I did was soak a bale of oat straw until it was thoroughly soggy, waited a couple of days so it wasn't dripping, put it in a meadow out back under some Aspen trees and sprinkled spore I got from a mushroom kit all over it. Voila!!! Big beautiful oyster mushrooms.
I can believe that growing mushrooms in a manner closest to natural conditions, outdoors, is the best way. In areas where they CAN thrive, of course. Airflow with sufficient shade will prevent contamination more, keep moisturization in balance, compared to domestic conditions with stagnant dry air, plus pathogens of all kinds. Like the trychoderma, the green enemy, spoiling the entire growth. Home grown can work, bu t we humans have to MAKE it work with more effort. This patient grower seems to enjoy spending much time, taking several steps, with his method of growing. For people with an instant gratification mindset, no patience, no sense of enjoying the process, observing, this isn't a hobby to enjoy much, I imagine.
This is what a great video is and made by a human being and yes, even without the perfect or proper explanation or of a professional video. It's really so informative what we're experiencing now than just a few years back without this media. People that scavenge youtube just to leave inappropriate comment gives no support or help. If someone expertise is above the video then they should leave a constructive comment that would help further the purpose of the instruction. To me watching this video has served its purpose as I have learned something new and it makes me wanted to try it.

Thanks for all the tips! I am going to try them but with some adjustments. Some corrections: you are only disinfecting, not sterilizing. Ispopropyl alcohol is optimum at 70%, not 90%; this may seem counter-intuitive but it has everything to do with absorbency through cell walls and resultant kill power. Should not use bare hands; there is no way to adequately disinfect hands, especially because of nails. Should use disposable gloves, disinfect those. Using a pressure cooker on all your equipment is helpful, basically a miniature autoclave.
Ive learned that you dont actually need to be that fussy about the whole thing, at least when your doing oysters. Stressing about your rubbing alcohol proof, or other minutia doesn't increase your chances of success really. Just get your substrate right and everything will be golden.
Also, you dont need to use that bottom inch of mushroom you can make spore prints as well. place the cap on clean paper face down after removing all the stem, wait 2 days you will now have what looks like a ring of mushroom slits its spores cut up the print and place into different jars.
This would be moving backward and slowing your progress. Growing from living tissue is must faster than germinating and nurturing spores back into living tissue. Plus by using the stem butts you are getting a clone of good genetics instead of a grab bag of genetics that will lower you productivity.
At one point I had oyster mushrooms growing everywhere, several different varieties from common to exotic tropical ones. They're certainly one of the easier mushrooms to grow. Quite a lot of fun to grow.
Brother in law grows mushrooms in logs, he use plugs from Field & forest. 3" to 4" diameter X 3' long. We buy them from him by the pound, best I have ever tasted.

I don't remember you having mentioning your name but thank you. I've had a passion for doing things on my own all my life. Last year I successfully produced my first batch of sake. I've always wanted to grow mushrooms. Thanks to you and several others on the 'Tube', I've learned more in one afternoon than all my prior years combined. The variety that can be grown with relative ease is amazing. This looks like fun for someone who is disabled such as myself and should keep me busy and happy as I love to cook as well and in particular love mushrooms. Again, thank you.
Paul Stovall I love growing crops my own food, I know there’s a mushroom season that’s grows naturally. I remembered when I was a child during the month of August to October is often have a thunderstorm if it happened during nighttime we have to wake up early before the sunrise and goes to areas like a wooded places ,lots of fallen dried leaves,bamboo plants. It’s where we find lots of mushrooms. Naturally grown mushroom cause of thunderstorms gets bad fast if sun shine on it. I always wanted to know how to grow it.. I don’t really trust the mushrooms in grocery stores.. it’s full of chemicals and the methods of growing it.

Awesome vid - thanks! For those with issues- the isopropyl alchohol is not required for success. He's just mitigating mold potential. The spores will be just fine and grow up well whether you wipe everything down or not ;)
Preventing cross contamination of the mushroom from other bacteria is the purpose.(Not just about mold) YOU DO IT YOUR WAY BUT DON'T ENCOURAGE OTHERS TO RISK CROSS CONTAMINATION ON SOMEONE ELSE INSTRUCTIONAL VIDEO.
@@ancientsage1969 , Perhaps I misunderstood the instructions, but here is what I heard: 1:24 - "and sterilize everything, because there's little bits of mold in the air that you can't see, and it can easily get into what we're doing and contaminate the whole project and you'll have to start all over..." 2:12 - "and everything needs to be sterilized with isopropyl alchohol to prevent foreign mold spores from getting into our mycelium and contaminating the whole thing..." If sterilization is one's concern, there are many ways to go about it. @Christa L below offered the potential solution of pressure canning, for example. By all means use isopropyl alchohol if that works for you. We're all here sharing tidbits we've learned from our own experience. I'm certainly not encouraging anyone to do anything, except to grow, to learn, to share what you've learned, and to be kind to one another. Much love.

Having to had deal with mass flooding this past year, we were taught for a non heat sterilization is hot soapy water and then rinse with a mixture of vinegar and peroxide. Alcohol and bleach cannot soak into the pores like vinegar and peroxide can to kill any hidden molds or germs. I agree with @KasperMoreax on his points as well.
For all of the things I see you're doing "wrong" here, you get good results. This is one of the better videos I've seen on youtube because it demonstrates what the limits are for sanitation, no hood, no positive pressure, at home on the counter. This is an incredibly empowering video. There is good info and we can see that you did it successfully in spite of some things that are a little marginal per the pros. This is a home setup and home process all the way. I love it! BTW, I don't usually comment on how-to videos, but this one is GREAT! Thanks for sharing. For all the people telling you everything you're doing wrong and "hating" on your video. I say, do it better or preface with "I'm jealous and lazy, but...".

Maybe different varieties are necessary as I know straw mushroom do grow successfully in SE Asia. BTW I also question whether the amount of alcohol cleaning is necessary. Mushrooms naturally grow in straw / manure mixes! Maybe I need to do a bit
We bought a growing kit and just have our first crop ready. I shall keep re-using the stems and keep harvesting. We didn’t need to sterilise anything, we just opened the growing box and dampened the coffee.
The kit needs a little rest to start up again. Moisten it, and let it sit a week. Put it in the fridge over night then bring it out to speed it up. After the 2nd batch break it up and add to new straw and it will keep going.

That's true Jennifer except in nature you don't see the billion other spores that failed to come to fruition, you just see the ones where the conditions were right. In a man controlled environment where we can make sure there's at least an 80% success rate that's why we use alcohol and other methods.
i watched your video as well as a video about inoculating a compost pile with mushroom spawn. i pureed a button mushroom and poured over coffee grounds in 6 little jars on my window sill and they are actually growing mycelium. so excited.
Thanks for the video. A canning funnel will save you cleanup time, as it fits nicely inside the mouth of the ball jar and it has a wide mouth so you can easily put in your coffee grounds much faster.
Aseptic technique? Never heard of her. Thanks for the vid! I'm nervous to try and start some mushrooms, mainly because I don't have a pressure cooker to use as an autoclave and am worried about contamination. Seeing other people do it without is reassuring

I agree with some steps to prevent contamination. I may entertain an alternative? - Placing the substrate in the mason jar and then boil or pressure cook the jar to essentially 'autoclave' before adding the mycelium.
Just a thought - Starbucks puts their grounds in a bucket for garden composting... May be a good source of grounds. I have found many 'espresso cakes' in there. Hot sanitized grounds those cakes be.

A controlled grow 'chamber' is a must. Currently I am reading 'Mycellium Running' by Paul Stamets. Good book, highly recommend to expand knowledge.
Do mushrooms grow in the dark? In the light? On the counter? What temperature do they grow best in then, and if you are going to teach us about growing mushrooms, why did you leave the part out about where to put the jar after you put the coffee grounds and mushroom pieces in there?

Go for a walk in the woods. You'll see LOTS of mushrooms growing in sun, part shade, and full shade. There are countless species, each with it's own needs and characteristics

Just a couple thoughts to maybe make the process easier: I have isopropyl in a spray bottle, so probably easier to get an even coating of disinfectant that way... Also, i will use wide mouth mason jars...they are much easier to keep clean as you can manage to get your whole hand in them to give them a good scrub. Thanks again! Great video!
I was always taught that you want to use 70% ISO when wiping down work surfaces for sanitary purposes, because the extra water slows down evaporation of the alcohol long enough to kill any germs on the surface.

I think the mold out preforms the fungi. I made kombucha and was upset that it developed mold... A loss, but disappointed and lazy I left it alone for months on the shelf. Imagine my surprise to find the jar completely full of the scobi!!! The mold lost in the end.
I did the coffee ground method three times. I ended up with contamination every time. I just started buying the pre made blocks. Had great luck with them every time. I think my contamination was coming from the grounds. Maybe i try again... Oyster mushrooms are my favorite. I blanch them in steam and eat them with gee. Like fungus meat.

A pressure canner as used by home canners will get you closer to sterile than any other method. Hardware stores are carrying canning equipment and much of it is helpful. My favorite set (under $10) contains a wide mouth jar funnel with a hole about 1.5" in diameter.
Very interesting video. I have found button mushrooms and oyster mushrooms at the base of trees... Diffuse sunlight and very damp conditions...they love to attach to wood bark...even if the log is dead. For me, follow how nature does things...not a sterile environment in the woods. Just a thought. Hope your mushrooms were yummy!

I have used this method over a dozen times. Sanitation, is the key, I lost Sso many batches to conramination... I basically gave up. I did have great success with a packaged kit, got about a pound of the oyster mushrooms... kit cost about what one would pay for a pound of mushrooms. I think I got It at home depot. It was a beautiful thing, and when they go, they grow fast. I will give this method one more try, I think where I went wrong was in not sterilizing the coffee filter. Only thing I seem to have missed. I did learn how to grow some pretty cool green fungus that seems to love my house, and coffee grounds.

This first batch I kept going all summer outdoors but I let it go and tried new varieties like king oysters. Those are the best in my opinion. You can get fresh ones at Whole Foods but they are pricey.
Actually 70% alcohol is better--the water in the 70% softens bacterial spores whcih then allows the alcohol access to the inside of the cell. 91 percent is less effective against the really tough agents of contamination. But thanks for the basic info. It is a good video.
Say you were using mushroom spores (i.e. from a syringe) to grow the mycelium. Could you simply fill a mason jar full with coffee grounds and then add the spores?
Only thing I suggest is you should always use cooking is high-quality gloves and you can wash and sterilize them no matter what if you use your bare hands there's stuff underneath your fingernails and you can end up messing it up always wear gloves sterilizer gloves first and your job much easier
if I can source coffee grinds from a coffee shop... do you think it would it work to sterilise them in a pressure cooker and then when they are at that warm temperature go from there? Cool video you've made it very easy to understand the process.
is there a special reason why you only use a bit of coffee each time? Do you need to let the mycelium spread before adding additional coffee? Thank-you for sharing this! I like the fact that you are careful about contamination. I make Kombucha & even with vinegar/ brine-based homemade products, one needs to be careful with disinfecting. I saw another vid that did not stress this.

Great video. But, you can save yourself a lot of time and effort rubbing everything down with alcohol by simply not doing it. Why? If there are mold spores present in your household environment, chances are pretty much 100% that your paper towel has been contaminated with them as well as your clothes, hands, hair and not to mention the oyster mushrooms themselves. Nevertheless, if you really feel the need to eliminate rogue fungus spores, invest a UV light and expose your entire work area to it for a few minutes before getting started. Again, excellent video. If using a UV LIGHT be sure to wear protective UVB & UVA glasses. Unprotected will definately cause eye damage with gravel like pain for days.Its the same as a welders flash
There are a few things worth trying select the best type - there are lots available. grow them in the best environment - some such as oyster muchrooms like cool humid areas and may be put outside (I learned these and the reasons they work from Gregs Mushroom Grower site )

If I let Mother Nature have her way we would have green mold under the ideal conditions indoors. I have photos on my site of no alcohol and outside that did fine. Just wet straw.

Storm Surge Unlike us, nature does not predetermine where mushrooms are going to grow. Mycelium compete for substrates with other organisms. Think about this fact and things should then make sense.

Green mold is not from the outside, it is decay from the inside. It occurs when there is not enough ventilation of O2 and when a product passes it's expiration date. A drain of liquid at the bottom and fresh H2O poured on top should revive the bio matter a little longer, it rejuvenates and flushes decay. Mushrooms are a fungus so it doesn't care about sterility, it is the substrate that needs to be watered to prevent bacteria.
Providing the perfect mix and environment for oyster mushrooms will invite more aggressive spores that take over. I have answered this before but I don't blame you for not going through the comments.

It is not how much it cost. It is the thrill of seeing the mushroom growing infront of your eyes. That is priceless!

Yup! Also 91% evaporates faster so it often evaporates before killing anything substantial.
In the pharma industry they use 70% as 90% is not the right mix as it has been tested to work .

Do I have to use coffee ground after coffee or can I just add hot water. I don’t drink coffee.
At one point I had oyster mushrooms growing everywhere, several different varieties from common to exotic tropical ones. They're certainly one of the easier mushrooms to grow. Quite a lot of fun to grow.
FYI: alcohol kills a lot of bacteria, but it does NOT sterilize!

I don't remember you having mentioning your name but thank you. I've had a passion for doing things on my own all my life. Last year I successfully produced my first batch of sake. I've always wanted to grow mushrooms. Thanks to you and several others on the 'Tube', I've learned more in one afternoon than all my prior years combined. The variety that can be grown with relative ease is amazing. This looks like fun for someone who is disabled such as myself and should keep me busy and happy as I love to cook as well and in particular love mushrooms. Again, thank you.

I remembered when I was a child during the month of August to October is often have a thunderstorm if it happened during nighttime we have to wake up early before the sunrise and goes to areas like a wooded places ,lots of fallen dried leaves,bamboo plants. It’s where we find lots of mushrooms. Naturally grown mushroom cause of thunderstorms gets bad fast if sun shine on it. I always wanted to know how to grow it.. I don’t really trust the mushrooms in grocery stores.. it’s full of chemicals and the methods of growing it.

Awesome vid - thanks! For those with issues- the isopropyl alchohol is not required for success. He's just mitigating mold potential. The spores will be just fine and grow up well whether you wipe everything down or not ;)
Preventing cross contamination of the mushroom from other bacteria is the purpose.(Not just about mold) YOU DO IT YOUR WAY BUT DON'T ENCOURAGE OTHERS TO RISK CROSS CONTAMINATION ON SOMEONE ELSE INSTRUCTIONAL VIDEO.

1:24 - "and sterilize everything, because there's little bits of mold in the air that you can't see, and it can easily get into what we're doing and contaminate the whole project and you'll have to start all over..."
2:12 - "and everything needs to be sterilized with isopropyl alchohol to prevent foreign mold spores from getting into our mycelium and contaminating the whole thing..."
If sterilization is one's concern, there are many ways to go about it. @Christa L below offered the potential solution of pressure canning, for example. By all means use isopropyl alchohol if that works for you.
We're all here sharing tidbits we've learned from our own experience. I'm certainly not encouraging anyone to do anything, except to grow, to learn, to share what you've learned, and to be kind to one another. Much love.

Having to had deal with mass flooding this past year, we were taught for a non heat sterilization is hot soapy water and then rinse with a mixture of vinegar and peroxide. Alcohol and bleach cannot soak into the pores like vinegar and peroxide can to kill any hidden molds or germs. I agree with @KasperMoreax on his points as well.

For all of the things I see you're doing "wrong" here, you get good results. This is one of the better videos I've seen on youtube because it demonstrates what the limits are for sanitation, no hood, no positive pressure, at home on the counter. This is an incredibly empowering video. There is good info and we can see that you did it successfully in spite of some things that are a little marginal per the pros. This is a home setup and home process all the way. I love it! BTW, I don't usually comment on how-to videos, but this one is GREAT! Thanks for sharing. For all the people telling you everything you're doing wrong and "hating" on your video. I say, do it better or preface with "I'm jealous and lazy, but...".

We bought a growing kit and just have our first crop ready. I shall keep re-using the stems and keep harvesting. We didn’t need to sterilise anything, we just opened the growing box and dampened the coffee.
The kit needs a little rest to start up again. Moisten it, and let it sit a week. Put it in the fridge over night then bring it out to speed it up. After the 2nd batch break it up and add to new straw and it will keep going.

That's true Jennifer except in nature you don't see the billion other spores that failed to come to fruition, you just see the ones where the conditions were right. In a man controlled environment where we can make sure there's at least an 80% success rate that's why we use alcohol and other methods.
i watched your video as well as a video about inoculating a compost pile with mushroom spawn. i pureed a button mushroom and poured over coffee grounds in 6 little jars on my window sill and they are actually growing mycelium. so excited.
That's the way to do it. I'm bringing home compost tomorrow. I help out on a horse farm and they have it at all stages.
You really should get a canning funnel, for adding coffee grounds to the jars.
Make sure you sterilize it first.

Thanks for the video. A canning funnel will save you cleanup time, as it fits nicely inside the mouth of the ball jar and it has a wide mouth so you can easily put in your coffee grounds much faster.

@@LadislavDobri if your mushrooms are contaminated, you will likely be able to easily tell, the same way you can tell if there is mold on your food.

I used what I had at the time but that does make it easy. I have too many jars now, lol.

Few ideas. 1 paper funnel or make a funnel from a two liter soda bottle. 2. Deeper dish..to make adding acidic grounds easier also.
I agree with some steps to prevent contamination. I may entertain an alternative? - Placing the substrate in the mason jar and then boil or pressure cook the jar to essentially 'autoclave' before adding the mycelium.
I've been doing that with grain. I guess if you have lots of coffee ready to go all at once that'd be easy.
Just a thought - Starbucks puts their grounds in a bucket for garden composting... May be a good source of grounds. I have found many 'espresso cakes' in there. Hot sanitized grounds those cakes be.

A controlled grow 'chamber' is a must. Currently I am reading 'Mycellium Running' by Paul Stamets. Good book, highly recommend to expand knowledge.

Great observations JoAnn. Everything you brought up is about "how to grow oyster mushrooms". You would hope that either the video is removed or some major editing/corrections would be made.
Go for a walk in the woods. You'll see LOTS of mushrooms growing in sun, part shade, and full shade. There are countless species, each with it's own needs and characteristics

Just a couple thoughts to maybe make the process easier:
I have isopropyl in a spray bottle, so probably easier to get an even coating of disinfectant that way...
Also, i will use wide mouth mason jars...they are much easier to keep clean as you can manage to get your whole hand in them to give them a good scrub.

I was always taught that you want to use 70% ISO when wiping down work surfaces for sanitary purposes, because the extra water slows down evaporation of the alcohol long enough to kill any germs on the surface.

A pressure canner as used by home canners will get you closer to sterile than any other method. Hardware stores are carrying canning equipment and much of it is helpful. My favorite set (under $10) contains a wide mouth jar funnel with a hole about 1.5" in diameter.
pressure cooker??? you wouldn't need as much rubbing alcohol if you sterilized with a pressure cooker, also it would be more reliably sterile..
Pressure cookers what I use but I'm looking into outdoor beds right now. I love doing pf and bulk but really want to master the outdoor side to this.

Diffuse sunlight and very damp conditions...they love to attach to wood bark...even if the log is dead.

I have used this method over a dozen times. Sanitation, is the key, I lost Sso many batches to conramination... I basically gave up. I did have great success with a packaged kit, got about a pound of the oyster mushrooms... kit cost about what one would pay for a pound of mushrooms. I think I got It at home depot. It was a beautiful thing, and when they go, they grow fast.
I will give this method one more try, I think where I went wrong was in not sterilizing the coffee filter. Only thing I seem to have missed.
I did learn how to grow some pretty cool green fungus that seems to love my house, and coffee grounds.

This first batch I kept going all summer outdoors but I let it go and tried new varieties like king oysters. Those are the best in my opinion. You can get fresh ones at Whole Foods but they are pricey.

Actually 70% alcohol is better--the water in the 70% softens bacterial spores whcih then allows the alcohol access to the inside of the cell. 91 percent is less effective against the really tough agents of contamination. But thanks for the basic info. It is a good video.

Say you were using mushroom spores (i.e. from a syringe) to grow the mycelium. Could you simply fill a mason jar full with coffee grounds and then add the spores?
Only thing I suggest is you should always use cooking is high-quality gloves and you can wash and sterilize them no matter what if you use your bare hands there's stuff underneath your fingernails and you can end up messing it up always wear gloves sterilizer gloves first and your job much easier

if I can source coffee grinds from a coffee shop... do you think it would it work to sterilise them in a pressure cooker and then when they are at that warm temperature go from there? Cool video you've made it very easy to understand the process.
Some people just put them in the oven. Starbucks gives you lots. They give you a huge bag from just one morning.

Thank-you for sharing this! I like the fact that you are careful about contamination. I make Kombucha & even with vinegar/ brine-based homemade products, one needs to be careful with disinfecting. I saw another vid that did not stress this.
I tried kombucha and it developed mold.
Disappointed and lazy I left it untouched on my shelf for months.

Great video. But, you can save yourself a lot of time and effort rubbing everything down with alcohol by simply not doing it. Why? If there are mold spores present in your household environment, chances are pretty much 100% that your paper towel has been contaminated with them as well as your clothes, hands, hair and not to mention the oyster mushrooms themselves. Nevertheless, if you really feel the need to eliminate rogue fungus spores, invest a UV light and expose your entire work area to it for a few minutes before getting started.

If using a UV LIGHT be sure to wear protective UVB & UVA glasses.

If I let Mother Nature have her way we would have green mold under the ideal conditions indoors. I have photos on my site of no alcohol and outside that did fine. Just wet straw.

As long as the mushroom mycelium spreads fast enough then the mold will not take over. Just do your best to keep it out.
I wonder if star-san would work. I home brew and that's the industry standard for sterilizing your work area and equipment.
Green mold is not from the outside, it is decay from the inside. It occurs when there is not enough ventilation of O2 and when a product passes it's expiration date. A drain of liquid at the bottom and fresh H2O poured on top should revive the bio matter a little longer, it rejuvenates and flushes decay. Mushrooms are a fungus so it doesn't care about sterility, it is the substrate that needs to be watered to prevent bacteria.

Providing the perfect mix and environment for oyster mushrooms will invite more aggressive spores that take over. I have answered this before but I don't blame you for not going through the comments.
