  • Recipe for Pandu Mirchi Pachadi:
    *Ingredients:*
    - 250 grams Pandu Mirchi (ripe red chillies)
    - Tamarind, as per taste
    - Turmeric powder, a pinch
    - Salt, as per taste
    - Jaggery, as per taste
    - Oil, for tempering
    - Pachi Senaga Pappu (Bengal gram)
    - Minapappu (Urad dal)
    - Avalu (Mustard seeds)
    - Jeera (Cumin seeds)
    - Garlic cloves
    - Curry leaves
    *Instructions:*
    1. *Prepare the Chilli Mixture:*
    - Clean the Pandu Mirchi and slice them.
    - In a grinder, add the sliced Pandu Mirchi, tamarind, a pinch of turmeric, salt, and jaggery.
    - Grind all the ingredients into a coarse paste. Keep this mixture aside.
    2. *Tempering:*
    - Heat oil in a pan.
    - Once the oil is hot, add Pachi Senaga Pappu (Bengal gram), Minapappu (Urad dal), Avalu (Mustard seeds), Jeera (Cumin seeds), and peeled garlic cloves. Fry them until they start changing color.
    - Add curry leaves and let them splutter.
    3. *Combine and Cook:*
    - Now, add the previously prepared chilli mixture to the tempering in the pan.
    - Mix well and cook on low flame for a few minutes until the oil separates.
    4. *Storage:*
    - Once the Pachadi cools down, transfer it to a clean, dry jar.
    - This Pachadi can be stored for up to 2 months when kept in a cool and dry place.
    Enjoy your Pandu Mirchi Pachadi with rice or as a side dish with your meals!
