Crispy Chicken Recipe

  • This mouth-watering crispy chicken is a family favourite. Enjoy them as part of a meal, a snack or appetizer!
    Recipe: Crispy Chicken
    Ingredients:
    2 chicken breasts, 439g (15.5 oz)
    1 ½ teaspoon of grated garlic
    1 teaspoon of grated ginger
    1 teaspoon of chilli powder
    1 teaspoon of paprika
    2 teaspoons of lemon juice
    ¼ teaspoon of cumin
    1 teaspoon of salt
    ¼ teaspoon of black pepper
    5 tablespoons of natural yogurt
    2 large eggs
    160 ml (⅔ cup) of milk
    171g (2 ½ cups) of panko breadcrumbs
    125g (1 cup) of all-purpose/plain flour
    Light olive oil
    Instructions:
    1. Cut the chicken into bite size pieces. Transfer to a bowl. Add salt, pepper, chilli powder, paprika, cumin, garlic, ginger, lemon juice, and yogurt. Mix until well combined. Cover with plastic wrap and marinate in the fridge for 2 hours or overnight.
    2. 2 hours later or the next day, crack open 2 large eggs in a bowl and beat. Add milk and mix until combined. In a second bowl, add flour and in a third bowl add the breadcrumbs.
    3. Working one at a time, coat the chicken pieces with flour, dip in eggs and milk mixture then coat with breadcrumbs. Dip in eggs and coat with breadcrumbs one more time.
    4. On high heat, heat some light olive oil. Once the oil is hot, reduce heat to medium-high. Fry the chicken for 7 ½ minutes, flip halfway.
    5. Place the chicken on paper towel to remove excess oil.
    6. Serve the crispy chicken with your favourite sauce and enjoy!
    Notes/Tips:
    - The crispy chicken can last in the fridge in an airtight container for up to 4 days.
    - Any other vegetable oil can be used instead of light olive oil.
