Just made these and they are super delicious! I didn't have orange extract for the frosting, So I just used 3 table spoon orange juice. The orange flavor came though beautifully, in both the cupcake and frosting. The whipping cream addition to the frosting was perfect. It made the frosting taste light and complimented the orange flavor! Thank you for sharing this recipe 😚
Yum! I think I would make the icing two toned. That way it's has a vanilla and orange swirl. This is a fresh twist on cake and cupcakes that I must try. Thank you for this recipe.

i used all purpose flower and instead of zest i added about 10 chopped kumquat (for 48 cupcakes) to the orange juice.. cupcakes turned out yummy... thanks! :) (p.s. didn't use frosting)
Nice demo! I do have one question, though. I thought your frosting was tinted orange when you were making it. But when you piped it on top it looked white to me. Am I going crazy? 😊 Either way, those look pretty tasty!

So basically, cake flour is just much lighter. To make your own: measure out a cup of regular flour, and remove 2 tablespoons of that flour. Then add 2 tablespoons of corn starch to replace the flour, and sift that mixture at LEAST 5-7 times on 2 sheets of parchment or bowls. This will make MORE cake flour (more than 1cup) so be sure to measure it out again.
Some people perfer cake flour. All purpose flour you can use instead of cake flour. Cake flour is just all purpose flour with cornstarch. I prefer ap flour because it’s easy to find and cheap :) same thing
About 16 or so, that's how much basically every cupcake recipe makes for me. I have a pretty small cookie scoop (basically an ice cream scoop) so I use one regular scoop plus a slightly smaller scoop for each cupcake. Sorry this was late. ^_^
Try using all cake flour. That should make them fluffier. :0) or/ Also , be sure you mix the batter on low, and mix until ingredients are just incorporated. too much mixing or too high speed makes cupcake batter come out more like muffins. Hope this helps. :0)

12-16 cupcake for regular cupcake size, and 24-26 for smaller cupcake size
