Rick Martinez is such an inspiration. Gives me the confidence to wear a floral shirt i was always avoiding.
I made it last night. Used boneless skinless thighs and turkey Italian sausage (out of laziness on both). It was FULL of flavor and very easy to put together. Loved it and will absolutely make it again!

Chris is the uncle who teaches you cook Properly, Rick is the uncle who does that, but makes it Fun and So Sexy!! I would seek both of their approval, of course, but I would never feel that Chris would be satisfied, whereas Rick would always be "It's Fine, we can fix this"

Something I've noticed with a lot of Rick's videos is that he rarely mentions what times and temps he's using. I know it's all in the written recipe, but it would be nice to have in the video too.
Oven temps are normally 350 for most recipes.
recoil53 Yup 350-375 is almost standard for all baking unless you’re roasting meats at high temps like 450 or broiling food

If there was a timer, or a clock at the bottom left side of the screen, just to give an indication of how long something was, say, fried.
Or you could look up the recipes on the website. Even better buy the magazine

Why not par cook the meats first and then use the rendered fat to roast the potatoes? Seems like a lost chance to add flavour
You could totally do that. Just toss the potatoes in the chicken and sausage fat instead of olive oil. May have to adjust your salt level.

Yeah, raw ground pork's still gotta get up to 160F.
Color is not a good indicator of whether a sausage is cooked. Ground meat in sausage does not always change color when cooked - so long as it has reached a temp that kills bacteria, it is still safe to eat. If the meat has browned prematurely, you would not be able to tell by color when the sausage is cooked.
