Sausagemaker.com is a good one stop shop for many supplies. I get my collagen sheets from thebutcherspantry.com. They don't have as many supplies for sale but they have more bulk options and better prices.
I just washed the salt mix off with red wine and then straight into the collagen sheet. The white mold is penicillium nalgiovense (mold 600) which is very prevalent in my drying chamber from salami that I've inoculated. It wouldn't hurt to inoculate the bresaola but I've found it's not as critical to inoculate salumi as it is to inoculate salami.

After curing did you just wash off the salt mix and then straight into collagen sheet? Or did you somehow innoculate with beneficial bacteria?

I do like spicy food. Thai Ladybird peppers are probably the hottest I've used in sausages, I've got a video of that coming soon.
