Absolutely love this homemade video! I would love to cook with this guy. Just made my first ever batch of Italian sausage in 2018 according to his instructions filmed in 1986 and it is so NICE. Such a nice batch of sauzitza. Much love from the bottom of my heart! What's a matter w/you? Hahahaha!
I make all kinds of sausage. here is a recipie for 1 pound of meat, 3 ounces ice cold water, 1 1/2 tspn salt, 2 tspn cracked fennel. 1/8 tspn red pepper for mild sausage, black pepper 1/8 tspn, if you have it 1 1/4 tspn coriander , chilli powder 1/8 tspn, paprika 2 1/8 tspn. , turkey meat will be dry so add fat, pork is best. after it is mixed fry a small handful if you think you want more fennel or red pepper add it. I don't use much salt so you might want to add more. it will improve the taste dramatically. you can make sausage in patties or just roll them in non stick tinfoil and chill them and fry them or bake them in it for awhile then remove the tinfoil and finish frying them or like meatballs if you don't have the stuffing material. I think you will be pleased with this recipie.
I have a recipe book from a sausage maker and I start with a recipe and cook a piece and add more ingredients as necessary until I get it the way I like it. as I am not allowed a lot of salt my recipe might not have enough salt for someone else's taste. the same with hot pepper. make it to your taste. and write down everything.
you are a nice man, I'll give you a tip, don't remove the hog casing from the faucet, you could put the plastic tube underneath and shift the hog casing with your fingers and insert it into the plastic tube straight away, so in this way you will have the plastic tube with the hog casing inserted ready to be attached on the grinder and ready for the filling process..
seriously thou..please put up the recipe if anyone has it..I know its salt, pepper paprika, fennel and pepper..not sure what else is missing..thank you....

I love this guy !! As a novice to sausage making, I only wish he had some measurements of spices as a guide.
