    I lived with a Mexican family for a year they clean the pig head and boil the whole head in a gigantic pot. Then they take all the meat they can get off of it and make the best tamales you have ever tasted

      Those people are lame. Beef tongue makes THE BEST tacos I've ever had.
      And if you've ever had real tacos carnitas.... well, they use meat, skin, stomach, tongue, kidney, and uterus. The varying texture from the different parts make a really good taco.

      Cezanne De pedro you are speaking of chitlins. I’m sorry I cannot spell that words correctly.
      We use to eat the “ chitlins “.
      But of late I have changed my mind on that part of pig 🐖.
      The colon is a way out of the body for what the body has already processed that some call waste. The colon is laden with toxic chemicals and such.
      Soooo as wonderful as that part of pig is, I no longer consume it.
      Just saying. This is my opinion.
      And I ant gonna fib. I just don’t think it’s healthy for humans to consume.
      I could for sure cook up a pot of boiled first, then battered and fried to a wonderful golden brown plate of innards 👏😊

    I can remember, through my childhood and adulthood, my Dad being out doing the bar-b-queing. Even in the teeth of a blizzard, he'd be out there, in his parka, big lethal flipper in one hand, a book in the other. Glass of rye and ginger on the shelf next to him. He's too old to do that sort of thing now.
    He came from a community that WOULD have been quite happy to get their hands on a pig's head and roasted it up. Lord knows Dad took great delight in scarfing down pickled pig's feet and "roll mops", pickled herring. His parents were Swedish, immigrating to a small mining town in Alberta. LOTS of practical European cooking going on, folks who knew how to get everything usable out of an animal.
    So a lot of older folks are going to appreciate what you're doing.

      Tree Hugger I remember making brawn as a child with my mum. She would just boil a whole head until the meat fell off the bone then add gelatine at the last step then ladle into moulds to set. That stuff is delicious .

    Are you kidding?!? That sweet cheek meat is amazing! And at one of the best restaurants as we passed through Sedona, their signature dish was pork jowls in a thick, spicy sauce.
    So yeah, anyone who doesn't appreciate a well-cooked pig head just hasn't tried the meat from one.

    It's 4:50p.m. and I thought I need to see how the Hollar's are before I start my supper. I wish you could hear my belly growling after seeing that meat!! I'm starved😄. My mom used to cook a hog's head every fall. She'd cook some spare ribs too cause my sister-in-law would not touch the hog head! The meat is delicious. Never had it smoked though, so I know it must have been outstanding!! And homegrown green beans too. That's good eatin'! Now on to cook my supper that can't compare to yours...store-bought sausage, sausage gravy, scratch-made buttermilk biscuits, and scrambled store-bought eggs. (We like breakfast for supper sometimes.) You guys are so blessed having your own food you raised!!!🥰 Meg, you and baby look beautiful. Those last 6 to 8 weeks is when they put on the weight and I bet you're feeling every ounce, huh!🥰 Those little kicks aren't so little now! Such a beautiful miracle though, such a blessing from God🙏

    Hog head cheese has that name for a reason. Glad to see less waste. And Meg can use the fat for soap. I do, my dad saves it for me when he slaughters pigs or cows. Thanks for the video.

    I must say, I didn't have the "heebeejeebees" but when Ben was preparing it and putting the rub on it, I did wonder what on earth it was. Then when he started rolling it, and I could see the skin, it did have a look of a "Serial Killers" lunch about it. LOL.

    I grew up in rural sc. I have a hog head story..My Mom sewed all my clothes and one her friends who sewed also had some lace my Mom needed. I was 8. We walked in their house and it was a single wide. you walked into the living room and the kitchen was next...there on the kitchen table was a hogs head....they had to catch me because I was at the end of the driveway by the mailbox lololol. We use to butcher in October and the meat would go to the smokehouse to hang and smoke and all the innerds would be used for sausage or puddin. Great days and memories I would never change. You are so right...no waste.

    I like that you use all the animal and it's a joy watching your family settle in on your land. Seeing things come together, watching things grow. I've been watching you guys from the time you moved onto your land and you both inspire my husband and I. We have been planning on doing something similar, we just moved out of California but up to Bend Oregon.     My wife is from a third world country and they eat EVERYTHING I think lol. Head being one of them. But smoked jowls are just like bacon and very delicious in pork and beans! Waste not want not right!

    oh my!!! my mouth is watering like mad!! I had dwarf purple beans...they were purple and also turned green when cooked!! looks so delicious
    i think if you guys want to make some money, i would love to come and visit, learn and work (and baby sit!!) once baby comes, for a fee of course! "Chickens are the gateway to homesteading" truer words have never been spoken!! love this channel !! you guys have come so far in such a little amount of time

    I never had pig’s head, but it looked delicious. You got me hungry so I had to go to the kitchen and get something to eat. As a young girl, in the land where I was born, I once visited friends who cooked not just the chicken, but the chicken feet, and they were delicious! Enjoy In bliss! Like you, I don’t like wasting anything.

      @@milliewilkie1969 It makes me think of a stew that my grandmother made 40 years ago with pieces of liver, pieces of kidneys and pieces of lungs ... and of course with a little good bacon ... My big -mother also made her own sausage and since the age of 5 I had the task of blowing in the bowels to check that there were no holes ... And the evening of the day when we killed the pig my grandmother made the blood soup ... It was a soup we ate only once a year the day we killed the pig ...
      We must have more or less the same culinary memories on both sides of the chanel for certain dishes at least.

      Pigs feet or trotters boiled then de-boned when meats falls off,then add marrow fat peas for the best winter soup ever invented. That is a recipe for the gods.

      The head used a cheap cut of meat from the butcher . Three or four times a year the big pan would be put on the oven top and brash was made . Three or four meals over the week .. Pigs trotters and bacon bones among over meals now none of them are a cheap meat

      I so agree! My grandma made delicioso(delicious) headcheese the old world way. Cook it till it fell apart, grind it, add lots of spices, onions and Idk what else. Pack it into jars and hot water bath it for 4 hrs. The best HEAD CHEESE you would ever want to eat. The BEST sandwich spread EVER. We actually would sit down and eat a whole jar at one sitting. Our grandma would ration it or it would be gone in just a few days.

    A tear in my eye and a lump in my throat. My honey moved to the other side in 2014.He would greatly appreciate the whole thing. Mr pig knuckles and all. Ps. I quit eating meat in 1977. Early exposure to Charlotte's Web and an empathic heart. Love to all and assundry.

    I am glad to see you use everything and reuse and repurpose. It is a great choice for your family and the planet as a whole. I grew up with parents who grew up during the depression, and were basically homesteaders, throw little to nothing away, save anything that could be useful. I helped my dad build a chicken coop out of old doors and a ping pong table, and used roof tin. He bought a stack of doors for a dollar at an auction, found one nice old door on bottom that he sold for $50. Bought the table for 50 cents, and the tin was if you haul it off you can have it kind of deal along with the posts. Designed the shape and size by the materials we had, worked great for years and is still standing, not being used after 40 years.

    We grew up on heart, tounge, brains, ox tails, pork hocks. Made head cheese, plucked chickens. Yes in the city. Well out skirts of the city. The neiborhood kids couldn't believe it. I think that they thought everything came from the store. My parents grew up on farms during the depression. Nothing was wasted.

    Nothing weird about it. Now I want some pig head too! The feet are also delicious. We recently got our first freezer beef, and we asked for the bones for bone broth, as well as the cheeks. Well, those bones have provided the most delicious meals. All the meat that's on them we eat along with the broth. They made a wonderful, simple, filling soup.

    Have you heard of hoghead cheese? You boil the head till it’s falling apart then grind it and season it up. I believe you remove a lot of the fat. I think they used some pepper flakes, lots of ground sage, salt and pepper , and a little vinegar. I’m not sure what else-that may be it. Then you put it into whatever container you want it to take the shape of. Refrigerate and slice it when it’s firm. It’s great. I’d love to see you make it next time you butcher. We made sandwiches with it-with mustard. I don’t think people make it much anymore-I guess because most people don’t butcher their own hogs anymore. My mama and aunt used to make it. I’ll be watching for a hoghead cheese. 😊 Btw your dinner looked delicious!! Take care

      in 1950s UK My mum used to cook up a pigs head and make something similar we called it brawn she put it in a big bowl with a weighted down plate on top till it set

    As I was watching (without headphones) meg and Ben discussing the green beans my husband who doesn’t watch but was sitting across the porch from me reading- looks up and says “whoever that guy is she’s talking to, she definitely likes “ lol. was so cute how he was listening and noted the love you have for each other. it’s one of your greatest blessings!

    The pork cheeks are sooo good breaded and fried.....ears roasted great for dogs....😉👀soooooo good....
    When I was very young my older brother and I made head cheese....pickled pigs feet... it was yummy and it was food and we never denied a meal

    As a child, I grew up with my grandfather that would take a cow head and bury it in a hole in the backyard 'pit' and let it cook all day. That night everyone would show up for a good, old-fashioned backyard party. He made Cowboy Bread - a party favorite and my nana would fix some fixins and folks would bring their dish. Good food and excellent family and friends time. The leftover meat (if any) usually went into breakfast tacos or hard shell tacos for lunch. Thanks for bringing back a wonderful memory.

    My brother in law made head cheese once and I’m mad I didn’t get the recipe. It was so good. I’d like to make it but he has passed away so I can’t call and get it. That looks delicious.

    My grandmother made head cheese out of the pig head and pig "parts." It creeped me out. She loved to "wring" chickens. That scared me to death. I was raised by my grandparents so it doesnt bother me much now. This made me smile and think of my grandmother, thank you for that memory.

    I watched my great aunt scrap the head for hog head cheese, we eat the ears fried and the brains with eggs and souse meat and crackling bread with the skin ect

    Years ago people would scrape the meat out of the hogs head and mix it with cornmeal and other spices and make scrape. I make it once every couple of years and it is really taste good. I try it and have it with fried eggs. Really like your videos.

      I make scrapple now just by cooking 1 lb. Sausage, add into boiling water (then cornmeal mixed into cold water) pour into the boiling
      water, add salt and rubbed sage and cook slowly until thick...stirring slowly until cooked and relatively thick. Let cool completely and then it can be sliced and fried till crispy and eaten with fried eggs (yummy) or just put it in a bowl and microwave till hot and eat it with some maple syrup. I LOVE IT!!!

    Wonderful memories of a lifetime! I grew up eating hog head cheese and souse meat with my mom and dad. I loved the pig ears and pig feet and there is nothing like making pie crusts and fried pies with lard! An old gentleman who worked with my father would give our family grocery bags full of cracklins. My siblings and I would eat them like potato chips scraping the fat from the skin with our teeth then just chewing on the smokey skin. My mom would also make “cracklin” bread that we ate warm with buttermilk. What a wonderful life!

    i was raised on moose and elk and chicken and pigs I had pigs feet and tail as well as chicken feet we didnt waste anything not that bad to this day i still have liver lol the animals have life for us to survive and i thankful everyday we have to be thankful for what we receive thank you

    loved watching the boys with their bikes on the horizon! They are so blessed to be in a loving and caring family. The only food source that grosses me out is insects...yet John the baptist ate locusts...makes me squirm

    This one brought back memories of my first Matansa. Everyone is out at the barn I'm wrapping the meat grandma is cutting. Then grandpa asked me to check the meat roasting in the wood stove oven, when I opened the oven door an eyeless cow looked back at me! I screamed, and ran howling out the back door! To this day grandpa still teases me about it, lol but it was the best tasting part of the 7 cows we butchered, and packed that day.

    My Dad, 94 years old, tells stories of when they harvested hogs grandma would cook the head in the oven and scrape it down periodically and use the meat for goetta. If you don't know goetta is a breakfast meat made in the Cincinnat, Ohio, area. He lived in Covington, Ky. I make it now with pork roast and pinhead oats. It is only made in Cincinnati, Ohio, now except for those that make it at home.

    Awesome.. you could make a 2 or 3 inch shell around the outside of your barrel and fill it with vermiculite or perlite for some good insulation

    We have several family’s of Mexican decent in our church, we had a Halloween party for 12-18 year olds, one of the family’s roasted a cows head and set it in the middle of the food table, holy cow! You should’ve seen the reaction from the youth, I thought they were going to come unglued until they were shown how to eat it, then it was all the rage and they had a great time.

    We always used the entire head from our hog killings mostly Brunswick stew. A few great aunts and uncles liked making head cheese but it was never my favorite. I love how excited you guys get over simple things! I feel a lot of folks forget to enjoy small pleasures in life! So very proud of y’all! Keep up the great work!

    We always used to eat the pig head when I was growing up.. I was born in the 50s so back in my day we had a huge family and never wasted a thing. I thought we were so spoiled growing up because we had a huge garden and orchard, our own chickens and eggs. We lived off the fat of the land. We were so healthy, never got sick. Great job.
