1. It's not actually Waluigi's taco stand, it's the Koopa's.
2. The Goombas, who are *mushrooms,* are supposedly made of *beef* yet drops a rasher of *bacon.*
Makes sense to me!
Don't forget that Waluigi is an unkillable elder god, but I guess that's already common knowledge.
But the goombas that want beef tacos are eating their own kind.

Cactus (or "nopales" un Spanish) is very popular in Mexico, basically a cultural staple
I don't personally like it, but it's definitely definitive
As for California Burritos, accept no substitutes: Beef, French fries, cheese, guacamole and sometimes Pico de gallo!!! California coleslaw is made anywhere but in California

If you're in socal there's this nopales candy that's basically just better texture pulparindo. I haven't had it in forever but I remember it being the only way I eat nopales
Nopales alone don't taste good. But you could try making it like pico de gallo (nopales, tomatoe, onion, cilantro) with some fresh cheese, chicharrones and a pinch of salt. Eat it with nacho chips or tostadas.
You could also try tortillas made of nopales (they don't taste different compared to regular tortillas though).
Nopales probably taste good but the only kind I've seen in my state are the pickled/canned variety
Where I'm from in the Midwest we also call non-authentic non-fast-food tacos "California." Like, not explicitly "this is Cali style," but it'll be a weird mahi-mahi and swiss chard taco at a place called "California [Something]"

I miss working the pizza fields where we had to wrangle the wild pepperoni boars, pick dough balls from the dough trees and beat up field mice for cheese after taking the order at the shop front and then returning to cook and serve. Good times.
