An Amazing Sponge Cake Dessert: Australian Lamingtons

  • This recipe is all about baking tasty Lamingtons, one of Australia's culinary icons. They're fluffy cubes of sponge cake, coated in chocolate sauce and rolled in dried coconut flakes. Lammos, that's how our Aussie friends refer to Lamingtons, are such a popular treat in Australia, that they even designated 21st July as National Lamington Day.
    Give our Lamington recipe a go and enjoy them with your next cup of tea or coffee!
    INGREDIENTS [20 Lamingtons]
    For the batter:
    - 4 eggs
    - fine caster sugar [150 g]
    - all purpose flour [1.5 cups / 180 g]
    - baking powder [1 tsp]
    - unsalted butter [2 tbsp / 25 g]
    For the coating:
    - powdered/icing sugar [2.5 cups / 250 g]
    - cocao powder [5 tbsp / 30 g]
    - unsalted butter [2 tbsp / 25 g]
    - milk [1/2 cup / 120 ml]
    - desiccated coconut flakes [3 cups / 200 g]

    I'm aussie and I've always used a sponge cake to make lamingtons - however jam on the inside or plain, both are traditional. I grew up eating them with jam on the inside.

    Hey hope the cake wont dry out coz it doenst hav any milk and it has very less butter and can you use wayer instead of milk in the icing

    Both with and without jam may be, "THE" tradition? But I have always favoured, "with jam" as mandatory for lamingtons.
    fwiw, according to, "Standard Recipes - for industrial cafeterias and other large food services." Commonwealth of Australia Department of Labour and National Service, 1957, p164. Lamingtons are made with a smear of Raspberry Jam in the middle. Can't go wrong with that...

    If they don't have jam in them I don't like them, they seem too dry to me ,, with jam all the way lol

    Never use a sponge cake for lamingtons. Always use a buttercake recipe as the base. Using sponge is not the authentic Australian recipe, buttercake is much nicer!
