Texas is primarily farmland it’s wear majority of cows & bulls & farm animals are raised and sold. So bigger meat from adult animals are common. That’s why they say everything is bigger in Texas. It’s literally big burgers and everything. The meat is natural.

Humble, real and unapologetic Texas. No facade or pretending to be sophisticated. Most people have a $50,000 boat, several high end cars and acres of land, but will still go and eat a tray of barbecue in their t-shirt and sunglasses.

@@dylnfstr Learn to make it yourself. You can get pork ribs on sale at kroger for ~$7 a rack. Pork shoulder often is $0.79 a pound. Unfortunately brisket is a lot more expensive than it used to be. That said, you can still find it for ~$1.80 -$2 a pound on sale 2-3x a year, with 12-13 pounds being the ideal weight for a home cook, ~25 but like the pork shoulder, it will feed you for a week. Beef ribs... you can get a 3 bone beef rib rack at costco ~$36, but it is best to always cook the whole rack, so that is the special occasion one. Chicken, pork loin and turkey are cheap and easy to smoke.
All this said, BBQ is a heavy meal. You might start eating it all the time, but as a 50 year old who has been making it for 20 years, even though I could afford to make it weekly if I wanted to and pellets make it easier than ever, every other week is about all we can stomach it. Not because it is bad, but because it is so rich and fatty.

Something you, and most people, don't understand about brisket and BBQ. Brisket is considered the worst cut of meat. It's tough, basically waste scrap meat. The quality of a BBQ cook/chef is rated by their brisket. If they can make the brisket tender, juicy, and delicious, that's a darned good cook.

One of you is a Texan at heart. The BBQ Texas is known worldwide for, is dry rub no sauce. Generally speaking... if you are at a BBQ in Texas and the meat is pre sauced, the presumption is mistakes were made and the cook is trying to hide them behind the sauce. In Texas, the meat speaks for itself, and if done correctly, saucing will only deter from experiencing the true flavor of the meat/smoke/bark mix. The bark is the sauce substitute.

Hello from Dallas, TX. It could get pretty expensive depending on where in TX you visit, but because BBQ is such a staple down here, you can find it for decent prices pretty much anywhere. Specific cuts of meat are going to be what sets you back. For my wife, my son, and myself if we go to an above average BBQ joint, we’ll probably spend $50-$75 after tip for all 3 of us with leftovers to take home. If y’all have any more questions, feel free to ask. Have a great rest of y’all’s day.

most of the cost is due to labor. if it takes 16 hours to make, you have to account for 16 hours of labor and once they run out, thats it until the next day. many top tier BBQ places also use prime cuts which means you have to charge even more to make a profit. its pricy but always worth it.

I'm about 90 mins away from Austin, so I get there 10-15 times a year.. First, good reaction to Jolly at Black's BBQ which is in the center of Texas. The reality of BBQ though in Texas is that if you go to any city or small town in Texas they have their own BBQ places, and if you asked the people there you'll get the reply that their's is the best. You could literally travel for weeks trying different BBQ from Houston to El Paso, Amarillo to Brownsville and not have the same taste each place. In San Antonio there are at least 50 different BBQ restraunts, some big, some small that have their loyal customers. One thing that I didn't notice on Jolly's platter was chicken which smaller BBQ places have, that comes as a half or quarter. Also, places like Black's make their sausage in large links about a foot long, while smaller places make shorter links about 4 inches. Like I mentioned their are a lot of different BBQ places just in Texas as there are in the entire South of USA.

If you have a spot that offers good beef ribs you are lucky, I can only think of two restaurants in my neck of the woods that prepare beef ribs along with all of the other meats.

So, I live about 10 minutes from that Terry Black's. This entire meal in this video with all the meats and sides probably cost close to $300. But that's a lot of food for about 5 people. . You can go there and get a two meat plate and two sides for about $23. A beef rib at $37 a pound will run about $50-55. Brisket by itself will run about $32 a pound, so maybe half a pound would run around $16. I have a feeling their host was paying for most of their meal.

Corn bread is in fact Corn cake. It's just baked corn meal. It goes well with soups. Ham & Beans, Red Beans & Rice, Gumbo, and Jumbalia. Even goes well with Fried Fish.

At least for the brisket, it's all about the smoking. In Texas, the bark is made with salt and pepper and then 12+ hours of smoke from post oak.
When you come to Texas, you should head to the Terry Black's in Lockhart (about 30-40 minutes south of the Austin one and is the home of the Black Family). I'd be happy to host and show you around that area (it's a small Texas town).

Yeah, I think the problem with European food in general is that y'all have outlawed so many things that it all just comes out as very bland food in relation to what we do here. There is no regulations on doing flavorful food here. As long as you're conducting your business in a sanitary manner, you can put in whatever spices and sweeteners you like. And speaking of spices, the US is fortunate to have a good selection of domestically grown spices and I'm assuming a good arrangement of importing some from abroad. There's basically a selection of 25 basic spices that almost every good chef uses to make their custom foods. But the most common are cummin, cinnamon, paprika, garlic and onion powder, thyme, parsley, basil, salt and pepper.

Although i do not live in Texas, I can attest to Texas BBQ. A couple thousand miles north, we have some crazy good bbq off of a Food Truck. I just did a dry rub on a couple of tri-tip roasts, that will marinate until tomorrow (24 hrs), then in the smoker for about 5 hours at 195°. It's for a small gathering. About 7 lbs.
Have a traditional Southern breakfast also.

Brisket is the toughest muscle on beef (bull or cow). You have to smoke it “low & slow”. Low is approximately 270°F, and slow could be anywhere between 8 -16 hours, depending on the size.

Hey folks, a different viewer from San Antonio here, the United States is big, we have a lot of land here and a relatively low population density (114/square mile in Texas). Most of our beef is locally sourced, and we have the space to grow large cattle. I look forward to seeing you here. Now in San Antonio, we have more barbecue per capita than anywhere in the U.S. Blacks BBQ is a family restaurant that is not in San Antonio, but there are a number that are within 90 miles of San Antonio. I think I went to the New Braunfels Blacks and spent about $40.00 for two people. We did not get that size of plate, though.
