  • It's almost already 16 years ago since I drank my first Japanese green tea. When I was young I had no clue how to properly brew it and what it was supposed to taste like. In this episode I relive my young naive times.

    most of consumer iron teapots are enameled from the inside, so the iron wont come into contact withe tea at all, but also you cannot heat them up. iron kettle is for boiling water and pouring the water only, teapots are for brewing teas, those just look alot like kettles. great video and explanation! thx!

    I would have never guessed this would happen! Just got an iron pot and I’m thankful it’s enameled since green tea/jasmine is my favorite. Great video, you’re hilarious thanks for sharing.

    Things are more complex. The iron kettle should be seasoned. Typically that is done by boiling hard water repeatedly so it has a protective layer of calcium carbonate. That layer will prevent oxidization of the iron, and corruption of the tea. Also, if there was any oxidization of the iron, one would boil black tea leaves in the kettle for a long time and that would generally reduce the oxide. It is not correct to say that kettles are only to boil water, even though that is a frequent use. It is entirely possible to make tea in cast iron kettles if one follows the proper process.

      Although it could be possible to make tea in an iron kettle, why would you want to? There are much better applications around such as clay tea pots etc.

      There were so many mistakes when it comes to me and green tea. Most greens sold here have such incorrect brewing temperatures. 90 degrees, four minutes. And yes, I did use THAT pot. Luckily not anymore.

    The story alone would have been a good video but you braved the oxidised brew to inspire us further, well done! Perhaps it was 17 years ago I got my first green tea, loose leaf, and entirely unprepared I dumped some into a cup, poured on the scalding water, and attempted to drink the unstrained potion with dignity. This tea thing, everyone should try it, I said. But live and learn indeed!

    I had a similiar experience when I first started with loose leaf tea. An enameled cast iron tea pot with an incredibly small brewing basket and high capacity for liquid. Every brew tasted exactly like warm or hot water. Great for decoration, not so much for tea!

    We made that mistake and wondered why the tea tasted so awful. Thank you for making this video. I will take better care of my iron kettle and will not brew green tea in it.❤

    Do you advise using the Kettle as a hot water holder and then you can pour it into your Kyusu to brew?

      Yes, an iron kettle is great to boil your water, but not to brew your tea in.

    Is the oxidation the same reason why? ... when i brew green tea in a porcelain teapot. I remove the strainer and poor my first cup. After an half hour I poor my second cup and it is darker and tastes differently than the first cup. Even when I stir the tea before the first cup.

      This is the result of plain oxidation of the liquor after it has been brewed. The liquor comes in contact with air, which causes the brew to oxidize if it is exposed too long. With the iron in the kettle and additional cause for oxidation is added and the oxidation happens sooner.

      This kettle has been with me for over 16 years already. In the beginning I made tea in it. Now I only use it to boil water.

      @@IamColt13 no, those are meant for boiling water primarily. Although recent versions have come out with an enameled interior so that the iron can’t affect the tea when used for making tea. They are however more popularly in use in the west for their Eastern appeal and are hardly ever seen used in Asian countries.

    There’s a difference between an iron “teapot” and an iron “kettle” and it looks like you are using the “teapot”.
    The iwachu website says (when translated) don’t boil water in the teapot.
    The iwachu kettles and teapots look very similar but are different . The kettle is pure iron, unlined. And the teapots are lined with something which is why that water was black.
    Also I think when you first purchase one you’re meant to keep boiling water and discarding it until it runs clear, before using it for drinking .
    I could be wrong, trying hard to find all the correct info before making a kettle purchase .

      What I am using is a kettle.
      It is pure unlined iron on the inside.
      The teapots are enameled on the inside to prevent the iron from getting in contact with the tea. And so it makes it safe to brew tea in them.
      But you can’t brew tea in the non-enameled iron kettles because the interaction between the iron and the catechines in your tea will make it black.

    ...what was the point of this video? You didn't cover how to do anything or what not to do. You didn't teach anything at all EXCEPT why the tea turns black, that's it.

      Just to share my first experience with green tea and how I failed blatantly at brewing it properly. This to show that everyone starts at the bottom and that the fun is really just in starting the journey and going the way. Some viewers might relate, others could get intrigued, while others perhaps think nothing of it at all 🙏🏻
