shapton pro 220 worst stone ever? sharpening my shibata kotetsu gyuto.

    I just got mine Kuromaku series 220, and I just love it. Its eating metal like a beast, even mine knife made of HSS-steel was easy to reshape. I did find the mud actually very useful and it didn't stop cutting at any point. I wonder if there is something wrong with your stone? I didn't add water at all, just in the beginning as much as the stones surface was wet enough.

      @@knifesharpeningnorway What I've heard the Kuromaku series stones are the ones you just like or not. Before 220 I used Cerax 320 and it was way too soft and it didn't worked with harder steels at all. But Cerax 1K and 3K have excellent feedback imo. and I've used those ones quite much.
      Did you have any problems with Glass stones so far? I was thinking Shaptons 8K Glass or Naniwa SS 8K for polishing.

    Have you tried the Suehiro Debado LD 180 grit? Its amazing - no loading up, not too soft so it doesnt shed grit and never stops cutting! Its also quite fine for 180, probably a 200-220.

    I enjoy using the fast Shapton Pro 1000 for general sharpening of all my knives, sometimes follow that up with a Shap Pro 2000 or 5000 for a better edge. I have used the Shap Pro 1000 for some light thinning, but I'm on the lookout for a good coarse stone for heavier thinning, one that would compliment the 1000. Would you recommend the Shapton Glass 220 ?

    You only need a stone with a grit lower than 400 for knives that are genuinely, close to butterknife-like dull or when you have to grind out chips and dings.

      Nope, its faster to thin on and begin on a coarser stone like re beveling etc

      I use water stones a good set is a shapton pro 1000 and a suehiro rika 5000

      A good cheap petty would be from the tojiro dp line its a good vg10.

    What is your bevel for sharpening ? It looks like you are using almost no bevel (flat).
    It looks like you are going for a 2-3 degree bevel.....and grinding away 1/2 of the blade, which is insane and not necessary. This knife is already has a razor-thin profile.

    I have that exact same knife as you do, and I never have to grind away half the knife....that's actually "re-profiling" the entire blade. I sharpen it with about a 12 degree bevel, which should be about 3 or 4 US quarters height from spine to edge.

      its called thinninh mate. mine was very thick behind the edge for my taste thats why im thinning it. the actuall bevel that does the cutting is around 15

    Jesus, just buy a thin behind the edge knives instead, you’re Ruined the profile of the knife, thinning Only requires if you loses about 1/3 of its original height, there’s really no point thinning the new knife

      Ive made it better than new mate haha and it dont lose any of its height. Ots already very thin i wanted it thinner its called performance and easy cutting
