Thank you for this recipe! I have been wanting to make Einkorn burger buns. What is the purpose of the eggs? Can they be left out especially if one does not consume eggs? When using the dough hook what number do you have your stand mixer on? Is there a possibility that I may have to use more than 5 cups of flour?
Hi Monica, thanks for the great recipe. Have you also tried this with a sourdough or yeast levain? I also did 8 buns on a pizza stone, and they turned out beautiful. I found them just a bit yeasty, so was wondering if you've tried a levain. I also mill my own berries, so it's super cool to see you doing that too!
I haven’t tried it that way, but I would think if you can hand knead for 5-10 mins (just because hands don’t go as fast as a mixer), they would turn out great.
yes, easily, and it takes way less time that the Kitchen Aid mixer! I use a metal dough 'spoon' like the one that Carla created for Jovial Foods. To make it softened, I would add 30% Spelt or Kamut flour. Since grains have a lot of oxalate, i sprouted the grains and milled it or use sourdough starter. 😊
It’s all in how you shape them. Just mold them more into a Hot Dog shape when prepping them. And I prefer to bake them on a stoneware pan. I’m sure multiple types of pans would work, that’s just what I use.
Watching to Learn so I do not know, but I am suspicious the nut milk doesn't have sugar like cow milk and the plant butter is missing the fat (sugar) that cow butter has. So, maybe feeding the yeast a little extra sugar when you do your dairy free ones would increase your rise or to keep those carbs out do a table spoon or two less milk and once your mixing wet and flour together add that amount of vinegar.
I would recommend ground flaxseed or applesauce. 1 TBSP ground flaxseed plus 3 TBSP water make a close consistency to an egg. 1/4 cup applesauce is equivalent to one egg. I have used these in the past, but not on this particular recipe.
