Vern's Camping Chicken Ramen

  • This is what you’ll need. I suggest that you measure out and package the dry portions out ahead of your outing, then all you need to do is add boiling water and chicken.
    Vern’s Real Chicken Ramen (Cook time: 15-20 minutes)
    1/4 cup (dry measure) freeze dried veggies (Karen’s Naturals Just Veggies)
    2 tbsp of dried mushrooms, chopped or broken into 1” pieces
    1/2 chicken bullion cube (Can use whole if you don’t mind the salt)
    1” did round of vermicelli or thin spaghetti (broken into thirds) (You can use any pasta including ramen noodles broken to fit in the pot)
    1/4 tsp ginger powder
    1/8 tsp red pepper flakes (optional, add a little heat)
    1 package of chicken (in foil package) (Hint: if you buy the small can of chicken drain the juice into the pot before filling with water, then add water to make 20 ounces.)
    1/2 tsp soy sauce (Use low sodium if you are watching your salt intake) (Hint: keep 1 or 2 packets of soy sauce from your Chinese take-out order. )
    Dash of seasoned salt and black pepper
    Bring 20 oz of water to a boil then reduce to a simmer. Add in veggies, bouillon, soy sauce, ginger powder, pepper flakes. Simmer for 3-5 minutes, then add vermicelli. Simmer until vermicelli is done (al dente, about 5 minutes). Add salt and pepper to taste
    Divide contents of chicken package into 2-10 oz bowls. Divide cooked ramen by ladling noodles and veggies into the bowls with the chicken then pour in soup, stir lightly and let it sit for 1 minute. There will be enough left for seconds.
