Ingredients:
For the Crust:
1 1/2 cups (150g) graham cracker crumbs (use gluten-free crumbs for a GF option)
1/4 cup (50g) granulated sugar
1/2 cup (115g) unsalted butter, melted
Alternative for the Base:
1 1/2 cups (180g) digestive biscuit crumbs (about 12-14 biscuits, finely crushed)
1/4 cup (50g) granulated sugar (optional, since digestives are already slightly sweet)
1/2 cup (115g) unsalted butter, melted
For the Cheesecake Filling:
16 oz (450g) cream cheese, softened
3/4 cup (150g) granulated sugar
2 large eggs
1/4 cup (60g) sour cream
1 teaspoon (5ml) vanilla extract
1 tablespoon (10g) cornstarch /cornflour
For the Pastry Cream Layer:
1 cup (240ml) whole milk
1/4 cup (50g) granulated sugar
2 large egg yolks
2 tablespoons (16g) cornstarch/cornflour
1 teaspoon (5ml) vanilla extract
1 tablespoon (15g) unsalted butter
For the Chocolate Ganache:
3/4 cup (180ml) heavy cream
6 oz (170g) semi-sweet chocolate, chopped
1 teaspoon (5ml) vanilla extract
Preheat oven to 325°F (163°C)
Bake base 10 -15 mins
Bake cheesecake 40 - 45 mins

Love the tip about flour in the crumb crust. Boston cream pie is usually the custard between two layers of yellow cake, no crust. I want to try this with a thin yellow cake layer(already baked)on top of the custard and then the ganache. And of course it pours over the sides! Got an event coming up that I need a dessert and this will be it!

We are on diets here so cutting back on the excess sugar. First of all, no base. Secondly lower the sugar level. Third make it into 8 individual mini servings. Hope it works! Thanks for the recipe.❤🙏😊🇨🇦

Years ago a friend gave me his recipe for cheesecake. When I went to make it, in my hurry I failed to notice that I had grabbed a brick of cream cheese and a brick of sour cream- that brand were sold in nearly identical packaging. It turned out wonderful. Thanks for vindicating my mistake.

Oooooh, this looks so good! I like the TASTE of Boston cream pie or donuts, I just don't like the texture with the usual cream filling, I don't like a soggy crust. If the filling is solid, like cheesecake, then that eliminates the distaste that I have with soggy crust, lol! Thank you!
