This is one of my faves. I have a suggestion- I don’t cook the pasta in the soup. I cook it separately as needed so that I can have fresh leftovers. The longer the pasta sits in the liquid the soggier it gets. So unless I know that the quantity of soup will be consumed at one meal I forgo the pasta in the soup and instead put it in the serving dish and mix it up with the soup as needed.
Bay Leaves=I wrap mine in a coffee filter. I fold it and then add to the pot. It makes it very easy to find and take out when done cooking. Or tie shut w/kitchen string.
Looks very hearty here. Cooking is always an artform, every chef's interpretation of a dish is their own and they do as they desire. Looks a lot like something I can use in my future restaurant vision for lunch.
Looks fantastic, I have had 100 different recipes all similar yet unique. My personal fave use Parmigiana Reggiano rhinds in the pot. No sense in throwing those away, it is a flavorful additive and it will reduce any need for adding salt. Thank You for this recipe

Your tangent is correct in a very gentle way. I can’t do onions for many dishes that say to include them, but I still find ways to enjoy the dishes by excluding them entirely or by using an onion substitute. That’s what makes cooking and trying new recipes fun!
I made this recipe last night and it was sooooooo delicious! I didn't have the macaroni pasta so used shells instead. I also added chopped pancetta to the onions as they browned. Otherwise, followed the recipe exactly. Thanks.
I love oregano, specially in my tea (Shay). I add it in the recipe my family uses. In a kettle -Add a few cloves, cracked whole cardamom & crashed cinnamon stick -Add desired amount of sugar (optional) -Add water & let it simmer -Add a tea packet & a little oregano (turn of the heat in half a minute or so) -Strain into a thermos & seal tight then it’s ready to serve Most of the time, I even forgo the actual tea packet & just use a bit more oregano.
Mmmm some pasta fazoool! lol. Ive been begging my wife for me to make this the way my mother used to make it. She would add thick pepperoni slices to it. My wife doesnt want any of it but ill just make it for myself lol

I'm of the school that doesn't feature the mirepoix veggies (I chop them pretty finely), uses only a bit of tomato, eschews herbs. and adds a Parmesan rind to the soup as it cooks. Diners sprinkle the soup with grated Parmesan, to taste. This is the way my Jewish grandmother made it!
Beautifully done. I made my Italian mom’s recipe today for the first time ever. I’m a man who loves his meats, but this dish is one of my favorites because it is so so good without it. And though my mom’s recipe of course differs from yours, cooking is an art, not a science!

Thats what this looks like... like he said over the yrs people changed it... this isnt the Traditional way of making it... my brother in law makes it and it looks like chicken soup LOL my sister had me laughing so hard when she sent me a pic and asked me what it looked like and then told me what it was... so people make it differently... BTW he is Italian also SMDH

Pasta Fagioli is my favorite soup at Olive Garden. I was very disappointed when they took it off the menu, though my daughter says it's back. I'd rather make my own, so I can add different beans. I like Cannellini and Kidney but I'll often add White or Pink beans.

Sometimes I add fresh-cut regular or French green beans and/or spinach or kale 🥬 to this for extra "greenery." It's one of the easiest soups to make, and another one where you don't have to feel guilty for using cans-- just open 'em up and dump 'em in!
I ❤ the dish My concern is when we have sour liquids like tomatoe puree or lemon juice for longer time in the cooking vessel...it over takes the taste...hardly the pasta, veggies taste comes out... Like some have commented to add pasta later when dinning than add early...for immediate consumption its gr8 👍 else for winter it so sumptuous...Tnx...
