I say this on all of Pasquale's videos, he is the best Italian chef on you tube & I thumbs up before I watch & can always change my vote, but never had to. I really like beef short rib stew being Irish, some folks want it thicker with gravy, easy fix, when stew is done , turn off heat, take 1 cup of stock & put in freezer 25-30 minutes til cool//room temp then add 1 tbls corn starch to stock & stir til no lumps then bring back stew pot to a mid boil, stir in stock & corn starch mix to the boiling stew & stir til thickened, easy fix. @@stevelogan5475 I find it easier to have flour added to a cold mixture 10 minutes before the end. Adding it in the middle slowly stirring constantly until you cook the flour taste out of it. But watch that you don't add too much!!
Fat IS flavour hence totally nonfat foods generally taste lousy (to me). I cook everything with onions and garlic and with soups I always use chicken stock instead of tap water, sauté the onions in a salted stick of butter adding the fresh garlic once the onions are translucent as not to burn the garlic. Since I don't cook with, add or even have salt in my home I tend to use products that are salted such as the butter, chicken stock and on occasion I'll use a bullion cube, but no garlic salt, onion salt and other seasoning salts like Adobo. It's such a salivating pleasure to watch Chef Pasquale prepare and cook these delicious recipes even though I gave up meat in 2015 becoming a pescatarian and plant-based, I enjoy watching these gastronomical treats to pass along to my friends and son and I also miss using a gas stove which cooks far better than the electric stoves we're stuck with in the south.This Chef is BRILLIANT!
