  • What the heck is an Oenobeer?! Oenobeer is less of a beer style and more of a category. Oenobeer is the perfect combination of beer and wine and it can be made by co-fermenting any style of beer with any style of wine must.
    For this project I’m making my first ever oenobeer so I want to keep things as simple as possible.
    Now let’s make some beer.

      I’d love to see an in-depth video of using your rig. You’ve got some rad equipment and I’m sure some people would love to see a “how to” on using it.

      I'd love to see more on different techniques. Pressure fermentation, decoction mashing and so on. Also pushing/mixing classic beers styles. Like I made an imperial brown ale with nibs. A weird stout/brown ale/barley wine hybrid. Tastes great

    Never heard of that beer style but sounds awesome and totally something I would pick up if I saw it! I made a Belgian triple and added grape juice about 4 days into fermentation and it is aging really nicely. Looking forward to you aging a big stout or more sours in that new barrel.

    I’m fascinated by this style. I started a Fruity Pebbles wine with this concept before I knew what it was. Mashed the Pebbles with enzymes, fermented on Voss at 100*. Started the juices, apple, & Cherry the same day. Hopped with lemon& orange zest, and lemongrass as well. When the mash was done, added it to the must and let it finish. Waiting on it to carb up in bottles now. Ended up dry hopping with additional zest and lemongrass for a week before bottling. I CANNOT WAIT!!

    Thank you for doing this grain to glass style. Great Episode! I live not too far from Oxbow in Maine. They have a ton of fun, interesting, and well made farm house ales. I am lucky to have them close by!

    This is quite an interesting style for sure.. I am going to have to try to find some in the store but brewing that is a much larger project than I want to get into right now, maybe in the future! Great video thank you for the work you put into all of the content you release.

    I've done quite a few brett saison and sour beer/wine hybrids...they are by far may favorite beers I've brewed. I've only done white grapes once (Sauv Blanc), and am typically using reds (Sangio, Grenache, Cab Sauv, Syrah). Anyway, I make wine out of my grapes, and just use the pomace to rack beer onto after I'm done pressing. It's a great way to use a product that is otherwise waste to a winemaker. So if you happen to know anyone that makes wine out of grapes, ask for their pomace! They're usually throwing it in the compost pile anyway, and it still has a ton of character to give. I've used anywhere from 1-4 lbs/gal of pomace to beer. Just note, you will have some absorption loss of your final beer because you probably don't want to do a full press and risk oxidizing.

      @@volkskrieg8735 Sounds delicious! Just note, pomace is very rarely pasteurized, so there is likely to be some extra bugs on there. Brett is usually not a concern, but you might get a small amount of souring if your base beer has low IBUs (which I actually enjoy).

      Yea I think of IGA as a style within the oenobeer category but I’m honestly not sure what the difference is

    The problem with storing a barrel with liquid in them is that your storage solution is going to leach the "barrel flavor" out of the wood. Barrels have a limited use as far as their wood flavor is concerned.

    Balasz Hungarian barrels are great. For new oak at this size, you probably want to remove more of that tannin with very hot (almost boiling) water flushed several times at this volume. You can taste the water to see what you're getting out. The surface ratio : volume is quite high so you're getting a mega dose of oak, like putting a pound of cubes into a 5 gal batch. After a couple fills the woodiness falls out and you get nice subtle notes along with the toasted character. Freshly dumped wine barrels are great too, but harder to find at this size. If you can find a smaller winemaker near you who is dumping some, you can get a great score.

    Hi Dan! Is there a difference between oenobeer and grape ale or they are synonyms? Cheers from Hungary, homeland of your barrel. :)

      I think of Oenobeer as the category and under that you have grape ale, Italian grape ale, and other styles. The styles have specific requirements but to be oenobeer it must simply use wine grapes. A grape ale for example shouldn't have any Brett character but an Italian grape ale can have low levels.

    what nutrients did you use for the yeast? Do you normally do that for beer making?

      I used cellar science fermstart and fermfed on this one and normally I use fermmax lol. They’re all mostly the same but I wanted to make sure I used the recommended stuff for my first wine
