I understand the "numbered" tiles. They almost look like standard dominoes. What I don't understand is the other side - the bamboo side. If the numbers go from 1-9, how are the bamboo ordered on the other side? Can you supply a link to a completed set on both sides that I could use as a reference?

What do you mean extra piece? Mahjong is 144 tile set. So 4 groups of 36 tiles. Think of each group as similar to "suits" in a deck of cards. Each of the groups has 9 different tiles, and 4 sets of those 9 tiles. Except one group has some slight variation, but is still meant to be a set. The "extra" tile you are thinking of is just used as a wild card from another suit.
The blank tile is also used in the event of a lost or damaged tile as a replacement. Most sets have 4 blank tiles as part of your purchase. It looks to be a fun game that could teach children about the names of the suits, how many in each set and which tiles have greater value than others.

the other side is the numbers 1-9 in chinese, so you’ll have to memorize the chinese characters for each number if it isn’t your first language
Its stil 1-9, just more like one-nine. the black markings are the words of the numbers.
Ichi, those are character tiles. Ni, the tiles correspond to the Han characters for numbers.
