All My Best Chocolate Ganache Tips

- All ratios are written with the first number as the weight of chocolate and the second number as the weight of cream.
For example:
1:1 Dark Chocolate Ganache:
227g (1 c) heavy cream
227g (8oz) dark chocolate, chopped
1. Heat the heavy cream over medium heat until it comes to just below a boil.
2. Add the hot cream to the dark chocolate and let sit for two minutes.
3. Use a rubber spatula to stir everything together. Start by slowly mixing in the center and work your way out.

You GENIUS!!!!! The most recent time I made macarons, I was struggling to get my white chocolate ganache to the same, smooth consistency as my dark chocolate one, and this explains SO MUCH!!

to anyone asking: he said " milk and white chocolate ganache needs more chocolate, so the first number(1,5 and 2)are refer to the chocolate, always! So, in milk chocolate 1,5(chocolate):1(cream).So like 150g chocolate and 100g cream. Or 1,5 cup chocolate and 1 cup cream.

I love the fact he actually explains how it works in a straightforward, easy to understand way. It’s really helped me get a good grasp on what went wrong when I mess up on recipes, now instead of beating myself up and dwelling on it, I figure out what I did wrong and try to fix it.

A quick whirl with an immersion blender is my go-to for rescuing a separated ganache. It has never failed me.
as a new aspiring chef de-partis tysm, this just helped me more than a regular chef could caus they overexplain the smallest details. This is literally a super fast yet best way to explain it.
Chocolate-Cream ratios:
Dark Chocolate:
1:1 for spreading
2:1 for piping
1:2 for whipping
White:
2:1 for spreading,
3:1 for piping
1:1 for whipping
So memorize the dark ratios and then remember that white adds one part of chocolate to each.
Whats the ratio for milk chocolate
thanks for writing this the video was too fast for me as a beginner and I'm still confused :/ I get 1:1 means equal amount but 2:1? 2:1? 3:1? which one is the 1 and which one is ×2 or ×3 ? the chocolate or the milk?

Should have watched this video before making mine earlier this week. It was way too hard to either decorate or fill the cupcakes with it. Probably I used to much chocolate and too less cream (even though I followed the recipe...) maybe I should give it another shot with your tips!
You can always soften it by reheating it slowly in your microwave or over a double boiler. Ganache will harden over time so be sure to reheat it if that happens to soften it back up.

My preferred flavoring mix-ins are a sweet red wine and sea salt. Find a good sweet red two buck chuck and mix some in with the cream. Add the salt in at the end. I like letting the whole thing cool in the fridge, then cutting up into squares, rolling them in cocoa powder, freezing, and serving. They're amazing for date night, or for following up date noght if it didn't go so well 😄
