If you plan to hatch it on site, made sure to kill any marmot in the area too, had one actually came towards the campfire and just to break the egg, not even targeting me. That could have been the legendary ostrich... almost hatched at 95% too.

You cannot unfortunately. You can put the baby ostriches in the basket but not the egg.
