Just to balance back all these negatives comments. I'm french and parisian. I'm what they called a foodie and have tried few michelin stars restaurant in my life. For a special occasion, i had the chance to try his amazing skills and cuisine at his place, in the domaine of Bois Giroult. Even if it's mainly vegetables, i had one of the best meal of my life from a quality and quantity point of view. From A to Z, it's was exquisite

My interest had been drawn to this restaurant and it’s chef for a while. Phrase taste the rainbow of colors and emotions on every fork could be a nice introduction and continues throughout the diner , the colors added with orange carrots, red and green’s that are observed on almost every plate doing the trick, oh seems that the place of vegetables in a menu is slightly not the big of a deal for a chef, as it used to, from a time when the restaurant removed all the animal proteins from a menu but they are a huge role in a menu. Merci, for documenting your visit , hope you had a beautiful experience with this diner.
What's amazing about Arpege, is that you really have to go there and taste it to understand. The food seems so simple and unrefined compared to most Michelin restaurants, but when you taste it, it's truly mind blowing. I still remember dining here 10 years ago, and the memory of the onion gratin and vegetable raviolis, are two of the best dishes I've ever had, anywhere.
I am confused at why it cost +500€ when there is not a lot of fancy ingredients, usually for that price you would have truffle and caviar everywhere 😅 it’s mainly vegetables and there is no extraordinary presentation but looks very tasty 😊
Yeah, not entirely sure. I heard Passard has a few really standout meat and fish dishes but that's it. If it was me, I'd go for the gardener's lunch, which is vegetarian but you get around a dozen courses and it's €185 (so less than half the price of dinner).
Why do they always say "we have..." to describe each dish? The waiters are not eating with the clients! Service is lacking, at least in English. They should watch a few videos of how service goes in a 3 star restaurant in the UK and US.

I agree. The €10 for water was a bit abusive, too. Given that the tasting menu was mostly vegetables, the water and coffee/tea should be included in the price.
These dishes don't look like a 3-star Michelin dishes; they lack depth, and the chef could have made them with greater details. These dishes, frankly, could be found at any 1-star michelin restaurants. If I were to be an inspector Arpege would lose a star, for sure.
Lots of confusion in comments. If you want meat then go somewhere else. It's not like they are tricking you into thinking there will be meat and there is none. As for the price, if you cannot afford it then go somewhere else. Some of you think a vegetarian restaurant cannot get michelin stars. Absurd. 5% of the world is vegetarian. That's like saying since Italians are 0.7% of the world population, no italian restaurants should have michelin stars.
I love your videos but I have to say that I think this menu is a disappointment considering the price. I saw this exact same tasting menu on another channel and I still think that over €500 for a menu made up of mostly vegetables isn't worth it. The spinach dish wasn't even well plated. Looking forward to your next restaurant!
Agreed, but the only thing I would say is that at least if you go vegetable only, you can get the 12-13 course lunch here for €200, which is something of a bargain for a 3* in Paris. Still, I know what you mean, only about half of the dishes looked really appetising to me (loved the look of the desserts, though). Arpege seems to be one of those love it or hate it restaurants. I've heard some walk away deeply unimpressed and others say it's world class.

As a Paris dude, have not been there, but herd a lot of complaints that is too expensive for a lot of veggies. Some even call it a sort of robbery...

Sorry, for a 3* star michelin you can not serve a simple boiled egg, mesclun salad, some raw vegetables.
