Pellet grills are inherently indirect cookers. Direct heat on them isn't really possible without removing the drip tray (which is a bit of a fire risk) unless your specific model has some sort of slide and grill feature. What pellet grill do you have?
Yeah, unfortunately they don't have a feature that gives you that direct access to the firepot. They do get super hot though! I think the 700 and 1250 will both hit 700 degrees now, and our bullseye deluxe was almost 1000 on the top end!
