A.G. is a legend in the knife community. He was the original expert! I am proud to have been a member of his knife collectors club back in the 70's. I have given many of those knives away as gifts. They were all first class. I still have several that remain prized possessions. I just found this TH-cam channel and was surprised at A.G.'s age... then I remembered that I am 75. I really appreciate A.G.'s candor... no BS... he simply tells it like it is. Many blessings A. G.

The film/layer between the hide/skin and the fat/meat is the subcutaneous layer. Also called the subdermal layer. It is a thin translucent film-like substance. Some vaccinations for animals, such as some rabies vaccines are designated for subcutaneous injection, meaning the serum is to be injected into the subcutaneous layer between the skin and muscle/fat. It usually allows for quicker absorption than injections in the muscle.
