  • On this video I break out the Pit Boss Vertical Smoker to smoke a "Cali Style" Wagyu Beef Brisket! This is a Cali vs. Texas throwdown with my bro Alton from The Dawgfatha's BBQ channel! We both were able to get these big'ol Wagyu briskets at the same time and I challenged him to a Cali Style vs. Texas Style brisket cook.     Myron Mixon trick, put parchment paper over the top of the brisket and the wrap with foil. Very nice looking brisket ! Love the new sprayer ! Great job on that CaliBrisky !

    People hate on gas because they try to be like Aaron Franklin. However you can produce a brisket that will rival his as long as you pump up the smoke because the gas will keep a constant heat. Four to five hours and you can wrap in butcher paper. Remember to keep is sprayed every 45-one hour. Don’t believe the hype, use what you got. People at competitions laugh at me until I place higher than them. Great video brotha Cali style!!!!!!

      Absolutely, it's not the arrow, it's the Indian. I used to shoot clays and I'd go to my local shooting place where old guys with 12-20k dollar guns will shoot as well. Typical South Florida style where everyone judges you for what you own, I'd be breaking 23-24 clays with my cheap 500 bucks semi auto Beretta 😂 only to see their faces

    Can you explain the purpose of propping up the meat with the wood in the beginning? Never seen that before.

      So the juices don’t pool up on top of the brisket and mess up the bark.

I had to pass on a full packer earlier today that was priced $7.99 per pound and it was "choice " grade to boot. Thank God we have access to great salmon.     Looked really good. I was wandering what exactly a California style brisket was, then you applied that California Ketchup (Sriracha) an Ah Ha moments. So I thought I like that. That salt and pepper only TX style is boring! I often use Tabasco as a binder, not by itself but as part of the S.W.a.T team. So I really liked the sriracha idea. I once cooked a Wagyu brisket on an Argentinian Gaucho grill, it is t exactly Santa Maria but it it is a similar concept. It wasn’t easy and I’d didn’t turn out perfect but it was still good. Even so I completely understand why you decided not to cook it on the Santa Maria. At fist I thought you trimmed too much then I saw how is still filled the width of the Pit Boss cabinet, another Ah Ha moment.

      Lol! Yeah had to trim it down. I made awesome burgers with trimmings. I’m thinking I might try a crab boil bottle for a binder and use cajun seasoning for the rub. Gotta try new things for sure. Thanks Big Lew!

    The (Sh)Pit Boss was my worse ever purchase! Total lemon! After replacing 2 boards, 1 auger motor, 2 temperature sensors, AND an igniter, mostly under warranty (but I DID the labor, POS has a million screws!) including them sending me a bunch of seasoning for the "inconvenience". After still having overheats, "err" messages, etc, I finally bought a 10k btu gas burner, cut a hole in the side, and mounted it, thereby converting this worthless shell with a smoke stack to a gas smoker, using chip boxes for smoke. NOW the thing works right! Lol Worse purchase ever! Very expensive insulated "metal box"!

    Youre opening your smoker too much. No need to open for the first 2 hrs.
