Hey guys: it's a cornstarch blend. Also, cutting chicken the same size is a smart move, because that means that they will all fry consistently at the same amount of time. They could also try the double fry technique a la "karaage" (Japanese fried chicken). Both are similar.

This place looks so much nicer. I used to work at Los Pollos Hermanos, the Boss was scary/weird. Made me scrub the fryer at night and was never happy about it. He offered to clean it himself and the place burned down! He doesnt know what he's doing. So many odd dudes walking in and out of there.

Although, he does seem like the type that would get in trouble for being a little too handsy with people. Lived in Joliet most of my life. Love this place. Anytime I'd get out of class I'd run right across the street for lunch every other day. If you ever go there: order the gizzards and their jo-joes. They are absolutely amazing.

I live in the surrounding area and I can confirm the chicken spice is by far the best chicken you will ever taste. Their mac and cheese bites are also incredible but nothing matches their chicken chunks.
The Best Anything of Chicago was, and always will be, Submarine Express in Mt Prospect. Closed a couple of years ago to build a Chase Bank and some condos. King Pastrami, no onion, hot. Tom and his family were the best. Mt Prospect will always love you.

Well, as long as they are doing suburbs... I personally prefer White Fence Farm. Served family style at their sit down restaurant in Romeoville, you get the appetizers: corn fritters, cottage cheese, beets, coleslaw, red beans. Then you get the chicken, some chicken gravy, and a side. I honestly don't care what you guys feel about it, to me it feels like home, and it's pretty nostalgic.
Bobtailthecat i have had it 3 times and that was the last time i will have White Fence Farm. It doesn’t have any spice(bland) and i got a mouth full of grease. I do have to say the restaurant itself is very nice on the inside.

Lol, they changed the oil for the show. What people dont understand is that darker used grease is not a bad thing. It will give a golden color to whatever u are frying and adds to the flavor. If the grease is too old, it will give a sour-ish taste to the fried food and it smells bad.

Cornstarch doesnt really give much of a crunch. Looks like rice flour.
