  • Decaf coffee can be extremely delicious, but it behaves a little differently from regular coffee. There are three mistakes that are pretty easy to make, especially if you're used to regular v60 recipes. Understanding these decaf characteristics will help you make decaf coffee that is consistently tasty.

    I should add that I used Cafec Traditional filters for this recipe. Looking through Gange's Physics of Filter Coffee, Cafec medium roast filters are "among the fastest papers in the presence of ground coffee". If you're having issues with stalling, filters may make a difference!

    I'm struggling with the Moka pot now. Seems like I cannot grind finer cause it'll stall, or channel. Funny lil beast.

    Does temp make a difference when brewing deCaff?

      I started off around 195 and ended up preferring temps around 205 to just off boil.

      Updosing 1 g, grinding one step finer, 90 Celsius water. Draw down 4 min, very tasty result. Maybe still a little acidic, but I’m very happy!

      ​@@andreas3120up dosing equals less extraction. Then other variable must be moved in opposite direction to compensate. Decaf tends to be more brittle and already a bit more soluble, given the decaffeination process. I would suggest to grind a bit coarser to avoid choking the filter, compensate brewing hotter and use tighter ratios (1:13 or even shorter)
      Coarser grounds exhibit way less tendency to clog the filter, much less channeling whatsoever and a more predictable result. Also going coarser your chances of over extraction are much less. Decaf tends to become muddy with multiple pours. I highly recommend trying minimal agitation. If using shower screens like the Gabi, Hario drip assist or melodrip, brew even hotter to compensate for the low agitation.
