I love your discussion of the channeling motions. I think it's very much in keeping with book canon for there to be plenty variety of individual movement styles within the Aes Sedai. Cadsuane thinks to herself one time (I wanna say it's TPOD) that she can tell who a sister learned a given weave from based on the particular movements they make while weaving it, so that implies that (1) that different sisters use noticeably different gestures and (2) sisters individually stay consistent over time because it's difficult to relearn the ingrained muscle memory that accompanies the particular concentration the weave demands. So it's plausible that Moiraine just being an extremely melodramatic Cairhienin noblewoman who likes to dance would mean she might have used dramatic gestures as she learned and now relies on them as a crutch.
