Just an FYI for anyone who wants to use lobster stock instead of chicken stock: Better Than Bouillon also makes a lobster base. If you can't find it in your local market, you can get it online. It's not too expensive and tastes pretty good. You can use it to make lobster bisque and so many other dishes, so it's not like it'll go unused if you do a fair amount of cooking.
My late mother in law made spaghetti with lobster sauce every Christmas Eve. She would use one or two whole lobsters and lobster tails which she cooked in her homemade spaghetti sauce. We would have baccala salad first, and then the lobster with the angel hair pasta. How we miss those wonderful days.
Jim- Perfect timing. I just took out 2 lobster tails out of the freezer. I know what I'm having for dinner tonight. I don't have any clams so I'll have to include them the next time I make this dish. Every year I tell my family we're doing the Feast of the Seven Fishes.. and I get their usual lukewarm response.. so I do our traditional homemade tacos. I'd rather do the fish!!! Jim you knocked it right out of the park as far as I’m concerned, I love both baked clams and lobster. The baked clams always remind me of New York at a small bar where they would serve you a huge platter of them…yum. This is a great combination even if James has grown tired of baked clams, he still gave it a 9⭐😉. Pro tip - you can easily pull the lobster meat out of the shell while it's still raw. Just get it separated and place it back in the shell so that you don't have so much work to do with your fork when you eat it
I'm with James. Surprise, surprise! I could eat that whole plate of lobster. A friend once told me (in an attempt to gross me out) that lobsters are related to cockroaches. Lobster and garlic, how can you do better than that? Looked absolutely magnificent. James needs to be a little more positive about his father's diligent and creative efforts. Jim, I'm with you. I admire the artistry involved and I'm sure it's delicious, but for me there's only one way to eat lobster: with butter and lemon. Anything more is gilding the lily. But that's just my opinion! It really does look great and you are very skilled. Keep up the good work.

Looks delicious. I love lobster. I’m sure the clams are delicious too. I’m just not a fan of clams, lobster shrimp, and crab is about as far as I go with seafood other than certain fish. But lobster is my favorite and it looks awesome. ❤
Yeah the great thing about kids is that they will say all this 'I don't like this I don't like that...' And then they will go to somewhere, some friend's place or an outside restaurant or something and then: 'These don't have the breadcrumbs like they are supposed to.' And y'all know EXACTLY what is going to happen here - the kid will become some world famous cook and he will look back at this one day. Best critics in the world though. You don't listen to what they SAY, you watch what they leave on the plate. lol

I'm in South Dakota. Frozen lobster is way spendy and it's hit and miss on quality. I'm gonna try a shrimp version of this in a gratin dish. I love the shit outa this channel.

Observation: The way you open your clams causes you to lose most of that luscious "liquor," as it is called by chefs and fishermen. It's much better to wash the clams and then put them in a sauce pan WITHOUT any liquid of any kind--no WATER. Just cover them and put them over a medium heat for 10-15 minutes. When you lift the lid, the clams will be completely open and you will have a generous quantity of delicious liquor that will make anything you mix it with out of this world. After they cool, all you have to do is tip the open clams to spill their liquor into the pan. Please, don't open clams, or mussels, for that matter, on a cutting board--you will lose so much. Otherwise, it looks like a good recipe. Thanks.
