Cooking for College with Arin | 'Dal Khichdi' - the comfort food!

- Before Arin leaves for college again, we just had to brush up our kitchen skills to make the ultimate Indian comfort food: Dal Khichdi. Watch the video to learn how to warm your stomach, and your heart, with Dal Khichdi!

Recipe:
1. In a large bowl, rinse and soak 1/2 cup rice and 1/2 cup moong dal for 20 minutes.
2. In a cooker, heat 1 tsp ghee and add soaked dal & rice.
3. Add ½ tsp turmeric, ½ tsp salt, and 3½ cups water. Mix well.
4. Cover and pressure cook for 5 minutes.
5. In a large kadhai, heat 2 tbsp ghee, then add 1 tsp cumin seeds and 1 bay leaf. Sauté on low flame until the spices turn aromatic.
6. Add 1 onion and sauté well until light brown.
7. Add ginger and garlic paste.
8. Add 1 tomato and sauté.
9. Add garam masala and 1 tsp chili powder. Sauté for 2 minutes or until the spices turn aromatic.
10. Mix the cooked rice and dal with the masala prepared on the pan.
11. Add 1 cup water and mix well adjusting consistency as required.
12. Finally, add coriander and enjoy dal khichdi with pickle and curd.

I'm a Maharashtrian. At our place, we make khichadi with green moong dal. In the tadka we add mustard, jeera, bay leaves, cloves and cardamom. Then add the dal and rice, salt, chilly powder. No onions tomato and ginger garlic. Instead of garam masala we add goda masala. Pressure cook and done.

We too add goda masala dhaniya 🎉jeera powder, 5-6 peppercorns , jaggery grated coconut or dessicated copra , kothimbir afor decorating
and eat it with kadhi or godda saaru ( kind of rasam, made with tamarind extract chilli powder, jaggery, salt... very watery), 🎉

Nice to see Dr Nene enjoy the small pleasures of life and pass it forward to his kids. I sometimes feel like he shouldn’t have given up all his hardwork and so many years of training and returned to India but maybe he is enjoying this life here. The kids and Madhuri are definitely lucky to have such a incredibly smart, hardworking and yet grounded person as a father and husband. And hope Madhuri realizes how much he has sacrificed in terms of the years of medical training and given up that to be with her so that she could live pursue her dreams and career in India.

He's still a doctor. It's lovely what he's doing to support his wife, but she sacrificed her career for years for him too. She also built what she did with a lot of hard work - no less than him, in fact. So please can we treat her career with equal respect as well? It's not easy to be a top actor and sustain that for years and years. A good partnership is all about supporting each other. She supported him first, and now he supports her. It's beautiful, but it's not necessarily a sacrifice
@@Stonytude Agreed that it’s a partnership and I think sacrifice is the wrong word to use and she did prioritize family life in the early years of their marriage and now it’s his turn. And no one is doing a favour to each other but rather choosing what is right for them at that point in their lives and however hard it must be to be a top actress I think people especially in India don’t get what it takes to be a cardio thoracic surgeon in the US. It’s too many years of studying and training and I was just applauding Dr Nene for that and kind of thinking aloud that hope the kids and her realize that he has given it up now. Yes, he is still a doctor and maybe cutting down on that must be a welcome change of lifestyle for him as well. I am not exactly criticizing him for doing that or trying to diminish Madhuri’s career. But at the same time I have tremendous respect for people who are in medicine for the right reasons and who pursue it here in the US in competitive specialities since both my kids are training to be cardiologist and I have seen the dedication and hardwork and the sacrifices they have been making from their early teens into their early thirties. That’s all! Kudos to both of them for what they chose to do so passionately in their twenties and for prioritizing their family lives at the right time in their married lives. Wishing them both nothing but the best and as I said mighty respect for Dr Nene for the sacrifices he made to be cardio thoracic surgeon.

Very simple & delicious recipe. I would recommend adding a bit of water in the frying pan in the final stage and then add the masala into the pressure cooker. This would avoid burning masala and make it easy to pour the content into the cooker.
Dr. Nene and Madhuri are very idea perfect parents. Even though they are celebrities they have made their kids down to the earth.

One more easiest way which I taught my son studying in USA is
Just put all vegetables with rice and daal in cooker 1 or two whistles
Then simple onion chillies or chilly flakes
and little garam masala ,salt tadaka mix with rice
Garlic and Ginger finely chopped that's option
Just add half spoon ghee or butter

It will not overflow and you will also get that beautiful ghee aroma 😀😀

Very nice! This is how we make dal khichdi too. The only thing I would add is instead of adding water to the cooked dal from an electric kettle, pouring it into the pan in which you made the masala, scraping off the leftover masala and then adding it to the dal would make a big difference. It's called glazing I think.
If Arin can do this, he can do South Indian Pongal too. It is simpler than Khichdi.
Rice and dal are the same method. In tadka, it is just Ghee, Cumin seeds, a small piece of crushed ginger, and black pepper. If you want spiciness add a few Black peppers as it is and a little fresh black pepper powder (coarsely pounded with hand). Add it to Rice and dal after it is cooked. It will be yummy.
Also, he can make this khichdi with Daliya (Broken wheat or wheat Rava). I made it. I took 1 cup Daliya to 1/2 cup moong dal. You can use the same measurement as you did. The water quantity is the same as you have added, for both these recipes.
He will have 3 recipes in the same method. He is good at cooking.

Can also be eaten along with kokum saar(amsul) and Poha or Batata papad.For garnishing, along with coriander leaves, fresh coconut also adds to the taste.
I do agree with Madhuriji that after eating outside food while traveling coming home and having Dal Khichadi or even Dal-Rice(waran-bhatt) with ghee on top and pickle tastes sooooo amazing.

Yep ! Dal Khichadi is my favourite food ! Comfort food, easy to make , healthy.
There's another method too, especially for bachelors.
This is the og Maharashtrian method. Mix the lentils and washed rice together, add an adequate amount of water, put a pinch of turmeric, salt , cumin and ghee. Tumeric has antiseptic properties. Let it cook on it's own.
Enjoy with some fresh yoghurt for a simple and filling meal ! You can add spices, vegetables as per your choice. I add some boiled soya chunks for protein. Also if you keep more lentils than rice , or atleast both of them equally, you will get a mushy khichadi high in protein !

I've taught this khichadi to my son's before they went uni.
They taught theirs English friends.. very easy to make in sort time.
They regularly makes it.
I first fry all vegetables strait in pressure cooker, Next add rice and Dal,water,salt.
Stir well,shut the lid And only 1 whistle .
After long shift and out of hours duty this easy,fast recipe they enjoy making.

awesome, protip: this can also be a one pot - just put everything in the sauce/chhaunk into the pressure cooker... not only does it save a vessel, but the nutrients dont evaporate away and stay in the dish..

even I had taken 45 days leave when my son was leaving for higher studies to USA n taught him simple cooking n wrote down a book different dals alu sabji etc with what is available in states as visiting since 86 knew what was available there Now a days especially in California u get everything easily
Very new to cooking needs this , dump the whole thing , I loved it .. Exactly same pinch , My son still learns all Indian chicken , fish curry and rest all whenever he comes home and lives with all white roomies … they love his cooking….❤❤❤
One suggestion .. once tadka is ready add water to tadka pan bring to boil and put the cooked rice/dal from cooker into pan .. will bind all the flavors better than putting the tadka into the cooker..
