- A Filipino classic kakanin made with cassava. Easy to make and does not require a lot of ingredients. My have only two tips here is - first, don't squeeze out the juice from the cassava because you are removing the flavor of the cassava. Second, adjust the coconut milk if you have a watery cassava so your pitchi pitchi will not be mushy. You can use water or pandan water instead of coconut milk. You can store the pitchi pitchi in the refrigerator for 2 days BUT do not roll them in grated coconut.

Looks yummy and colorful😊. Chef Rose, how about if using frozen cassava, should we drain the cassava before using?
I always use frozen cassava. I do not squeeze or drain the cassava before using.

Thanks for sharing! What's the shelf life in a No fridge area ?
If using coconut for topping - 2 - 4 hours only. If using cheese topping 8 - 10 hours.
Much appreciate:)
Chef, pwede ba water instead of coconut milk.Pangbenta lang.. and pwede din ba wala na butter? What is the difference if wala butter?thank u
Yes. You can use water instead of coconut milk. You can omit butter. Difference is flavor. Mas masarap with butter.
Hi Chef Rose,
Is this KAKANG GATA? Or 2nd extract?
Kakang gata is coconut cream - first extract without addition of water.
Thanks chef akala ko mali ang method ko s pagluto ng pitchi kc others are squeezing the liquid out of it which I did when I first made pitchi you're right it becomes flavorless.. the addition of butter I guess adds up to the flavor but can it be omitted if it will be for selling or the taste will be different?
You can omit butter or margarine. It is for flavor. There is a slight difference in the taste but not that much!
❤️❤️❤️
Thanks!
Is cassava poisonous Mam if not processed properly. My househelper always tell my wife not mess with it.
All cassava contains a certain amount of cyanide which is completely eliminated when the cassava is cooked thoroughly. As long as you eat a well-cooked cassava, you have no cause to worry. By the way, may I also add that squeezing out the juice from the cassava does not take out the cyanide. That is a myth. I have cooked with cassava for over 40 years and never did I ever make a cassava recipe when I squeezed out the juice. When you squeeze out the juice, you are left eating only the "sapal". I always explain this to my students in my classes. Hope this info will help. Thank you for watching!
