Well realistically it is raw, but eating undercooked steak is pretty safe unless you're in mad cow territory. Or you're like me and get a parasite related to undercooked meat when you were 6 or 7 years old, and go from weighing 150 lbs to 50-70 lbs in a single year before realizing that you were close to death from malnutrition. Respect what people like and want, and what people don't like or don't want. I order steaks medium well or medium rare, but never rare.

That's definitely closer to medium, probably around 140ish degrees. But that's actually the sweet spot for a ribeye. The connective tissue breaks down a little more, and the intramuscular fat renders down and becomes juicer.

There’s a difference between raw and rare/ medium rare. That’s why they are different names. It really does depend on the quality of steak you get though. If it’s lower quality or a little bit older (left in the fridge too long) I might cook it a little more. If it’s fresh and high quality, go for medium rare. If I go to a random restaurant I might go for a medium steak. If I go to a nice steak house I hope the chefs know what they are doing and order medium rare.

Am I paying for the MEAT? or am I paying for the recipe?? If I'm eating A5 authentic Japanese wagyu , I want it blue or not cooked at all. Rare at most! I want to taste and learn and appreciate the work that went into the MEAT before it lands in the restaurants cooler. On the other hand, if I'm eating something like a bison (or other fancily cooked) London broil or (dare I say) even birria tacos! Go ahead and let the chef cook! If they supposedly mastered a recipe on a cheap or familiar or common piece of beef, then however they choose to cook it is usually fine by me. That's why for most steaks (they can be doctored up) .. if you wanna know if it's good meat and a generally good cook, I tend to lean towards the rarer side of things. Has it been aged? Is it vacuum sealed with tons of hemoglobin? Does it taste very irony? Is it dry? Is it old? Was it frozen? You can tell alot about a piece of meat and how it was grown, handled, and prepared if it's rare of blue. Idk, my personal opinion, I appreciate care of a dish at every level. If you know what to look and smell and taste for, a great steak is really a great steak.
Side note - if you're interested in going to a new restaurant and don't know if its worth the price tag on their menu. Eff the google reviews, eff whatever pictures they have online or if they have a Lamborghini parked out front. If it's open and busy on a tuesday/Wednesday/Thursday afternoon at 3/4/5 o'clock and the parking lot is full, go ahead and spend the money. Chances are, it'll be worth it.

Well realistically it is raw, but eating undercooked steak is pretty safe unless you're in mad cow territory. Or you're like me and get a parasite related to undercooked meat when you were 6 or 7 years old, and go from weighing 150 lbs to 50-70 lbs in a single year before realizing that you were close to death from malnutrition. Respect what people like and want, and what people don't like or don't want. I order steaks medium well or medium rare, but never rare.

That's definitely closer to medium, probably around 140ish degrees. But that's actually the sweet spot for a ribeye. The connective tissue breaks down a little more, and the intramuscular fat renders down and becomes juicer.

Of course I’d still choose a medium well over it anyway but it wasn’t that bad. However in order for a well done steak to taste great it needs to border medium well. Like it is just a little more cooked than medium well. That’s what I consider a “good” well done steak.

There’s a difference between raw and rare/ medium rare. That’s why they are different names. It really does depend on the quality of steak you get though. If it’s lower quality or a little bit older (left in the fridge too long) I might cook it a little more. If it’s fresh and high quality, go for medium rare. If I go to a random restaurant I might go for a medium steak. If I go to a nice steak house I hope the chefs know what they are doing and order medium rare.
I prefer blue for most. This is a perfect medium rare. If not a little overdone for my taste. Pink center, black top. Nailed it.

@memylaptopandblitz7338 Honestly, I've worked in higher end restaurants, and I'm currently a butcher, and this is the question I ask myself when looking at a good steak dish.
Am I paying for the MEAT? or am I paying for the recipe?? If I'm eating A5 authentic Japanese wagyu , I want it blue or not cooked at all. Rare at most! I want to taste and learn and appreciate the work that went into the MEAT before it lands in the restaurants cooler. On the other hand, if I'm eating something like a bison (or other fancily cooked) London broil or (dare I say) even birria tacos! Go ahead and let the chef cook! If they supposedly mastered a recipe on a cheap or familiar or common piece of beef, then however they choose to cook it is usually fine by me. That's why for most steaks (they can be doctored up) .. if you wanna know if it's good meat and a generally good cook, I tend to lean towards the rarer side of things. Has it been aged? Is it vacuum sealed with tons of hemoglobin? Does it taste very irony? Is it dry? Is it old? Was it frozen? You can tell alot about a piece of meat and how it was grown, handled, and prepared if it's rare of blue. Idk, my personal opinion, I appreciate care of a dish at every level. If you know what to look and smell and taste for, a great steak is really a great steak.
Side note - if you're interested in going to a new restaurant and don't know if its worth the price tag on their menu. Eff the google reviews, eff whatever pictures they have online or if they have a Lamborghini parked out front.
If it's open and busy on a tuesday/Wednesday/Thursday afternoon at 3/4/5 o'clock and the parking lot is full, go ahead and spend the money. Chances are, it'll be worth it.
It’s because so many people probably grew up eating over cooked steaks because their parents were scared of “the blood” and so the second they see any pink they immediately go “raw”
