I use to work in a bakery as a stocker and do inventory. Everything came in frozen and when they would get cake orders they would just pull out the sheet cakes/cupcakes from the walk-in freezer and then decorate. When it was slow I volunteered to help the cake decorators and learned how to decorate. I was a single mom of 5 boys, so I bought supplies here and there. I did lots of practice at home as well. My boss started giving me overtime when someone was out sick or took vacation. I had a major hand surgery that went wrong and have no use of my hand. I miss decorating…it’s been 7 years. I think I am going to attempt it just to see if I can learn to do it one handed. It has been quite debilitating, depressing and decorating gave me joy to share with others.

First, I remove the cakes from the deep freezer and sit them on the counter for about an hour WITH the foil and plastic still on. Then, I remove the foil and allow the cake to thaw completely for another couple of hours. I have kept cake frozen in my deep freezer for up to 3 months, and it tastes fantastic and is very moist (thanks to ice crystals)!

@@AsiaCoffee can you make a video on how to frost your cake I made a cake and made buttercream but when I went to frost my cake for the crumb coat the butter cream was kinda thick and when trying to spread it would pull and rip at the cake and then it become runny like the buttercream began to melt off my cake it was a mess also once done doing the crumb coat do we put in fridge or freezer also before using buttercream do we let it sit out on the counter top or do we need to refrigerate before use.

The KEY with freezing is to try to create an airtight arrangement. If you’re using ziplock bags for cupcakes, I would wrap those cupcakes in plastic wrap first, then place them in the ziplock bag. Make sure you get as much air out of the ziplock as possible!

Wrapping it in plastic wrap then covering it with aluminum foil will prevent freezer burn, though I highly doubt that the cake will taste funny from being in the freezer for a couple days. The key is to provide 2 layers of protection against freezer burn and smells seeping into your cake and cupcakes. The cupcakes are stored more securely in the plastic containers. Wrapping the containers in plastic is the second layer of protection. The cake layers can be wrapped more tightly because they’re using trimmed/leveled before decorating. This isn’t the case with cupcakes. Help this helps! 💕
Are you thawing them from being frozen overnight or are you covering them in plastic wrap and letting them sit on the counter for next day use; no freezing? If the latter, that’s perfectly normal! That’s why we leave the cakes un-leveled then cut off the sticky tops. 😉
