Thank you so much for watching! Once you start canning you will love it! Great question on the canning rings. It is recommended that jars be stored without ring bands to keep them dry as well as to allow for easier detection of any broken vacuum seals.
Just a heads up. Boiling isn't sterilizing. Pressure canning at 15 PSI @ 230 F will, for all intents and purposes, sterilize home projects. I've spent a bit of time working in a microbiology lab.

So that if you get a false seal you will see it has opened.

Pickled goods are high acid and can be water bathed, not needing to be pressure canned.
The only thing I do differently is add onion to the beets
