Gluten-Free Made Simple - Vanilla Cream Cupcakes

  • Bonus recipe! These Vanilla Cupcakes are perfect for any Birthday Party or special event! I suggest baking them the day of your event or the evening before for maximum freshness.
    Ingredients:
    Cupcakes:
    1/2 cup butter, melted
    3/4 cup sugar
    2 eggs
    1 + 1/4 cups 1:1 gluten-free flour
    1/4 tsp salt
    1 + 3/4 tsp baking powder
    1/2 cup milk
    2 tsp vanilla extract
    Frosting:
    1/2 butter, softened
    1 tsp vanilla extract
    3 cups powdered sugar
    2 Tbsp milk
    Directions:
    For the cupcakes, cream together the butter & sugar. Add eggs and beat for 1 minute at medium speed. Add flour, salt, baking powder, milk, and vanilla and beat for 1 minute at medium speed. Place cupcake liners in a muffin tin & evenly fill with batter. Bake at 350°F for 18-20 minutes. Let cool before frosting.
    For the frosting, cream together the butter and vanilla. Gradually add the powdered sugar, mixing well while adding. Add 1 Tbsp of milk at a time until desired consistency.
    Frost & enjoy!
