The Most Delicious Ukrainian Cabbage Stew (with meat and prunes)

  • In this video, we show how to make the most delicious Ukrainian cabbage stew. It is very popular in Western Ukraine, which borders with Poland, and is similar to the famous Polish bigos. However, in this particular recipe we use fresh cabbage and raw meat, not sauerkraut and kielbasa that are used in the Polish recipe. The main ingredients include:
    1 pound meat (chicken, turkey, or pork)
    1 cabbage
    2 carrots
    1 onion
    3 cloves garlic
    4-5 mushrooms
    1/2 tbsp paprika
    2 bay leaves
    3 cloves
    25 prunes
    Salt and black pepper to taste
    1 tablespoon balsamic vinegar
    In the video we illustrate the process in every single detail: how to shred the cabbage (as not everyone knows how to do it properly and fast), the sequence of adding ingredients and the timing for simmering.
    Instructions:
    1. Cut cabbage and shred it. Add balsamic vinegar and salt, then squeeze the cabbage with hands to make it softer and juicier.
    2. Dice onion and chop garlic.
    3. Chop up mushrooms.
    4. Grate carrots.
    5. Sauté onion and garlic in skillet, add mushrooms and carrots, continue to simmer under the lid.
    6. Meanwhile, cut meat.
    7. Add it to the veggies and continue to simmer until the meat is almost ready.
    8. Slice prunes.
    9. Add the shredded cabbage, mix well. Add paprika, black pepper, salt, and cloves.
    10. Add prunes and mix well. Simmer for additional 10-15 minutes.
    11. Serve hot or warm. Enjoy!
