How To Make Tomato Bredie - South African Recipes - Lamb Potato Stew

- Tomato bredie is a South African stew, referred to in Afrikaans as 'tamatiebredie', normally made with mutton. It is cooked for a very long time, and its seasonings include cinnamon, cardamom, ginger, and cloves as well as chilli. It is of Dutch origin. "Bredie" is the Afrikaans word for "stew", but is actually a word of Malaysian origin. This form of cooking was first introduced to the Cape by Malays, who were brought to the colony in most cases as slaves. The word bredie refers to oriental spinach. In tomato bredie tomato is used instead. Pumpkin, green beans and waterblommetjies (Cape water lily, Aponogeton distachyos, flowers) are also used. This traditional South African dish is commonly eaten around South Africa by both locals and tourists.

Im making a lamb and butterbut bredie as i watch this. Im not using tomatoes tho.
I feel like the chef in the video didnt beown the meat enough. You really gotta brown it imho and this browning faze is when you sweat the cloves ans cardomon. As i brown i add a ground seasoning blend of choice ground in a mortor and pestle. This get the meat nice and dark brown with a slight crust. Its at that point you deglaze wuth a liquid and braise

Sorry, but adding chili, cinnamon, cloves, elachi, will give it a curry flavour. As a true South African recipe, we wouldn't add those. Just saying :)
Adding a good red wine to the meat browning process gives the bredie a fabulous taste, and adding chicken stock and a dash of Worcestershire sauce instead of salt, adds a whole new level to the dish.
As a cape Malay recipe he is correct to add those spices you don’t add red wine in Malay cooking it’s not allowed and the pronunciation of bredie fine

@@MultiTYSON007 Late to the party, but we make it without most of the spices and I’m from Durban.. just saying. Different areas do it differently. Cape Curry is very different to Durban Curry. Great thing about South Africa, it’s diversity 🇿🇦
