The taste of the coconut sprout depends on the stage of the sprout and the weather. It can be very bland to highly refreshing on itself. No need to use the coconut flesh. Grew up in a state in India where the name of the state itself means land of coconuts

I’m an islander myself. Back in my younger days I have to go to the jungles and I never carry lunch if I should get hungry. The jungles and the ocean offers food whereas the land too. I would cut up a coconut sprout and eat it for lunch and catch shrimp in the ponds just by my hands. Life was so good back then versus todays life. I truly miss it so much.

In India, we have a State called Kerala. Which literally translates to Land of Coconuts.
The place uses husks for weaving, and burning. The leaves of coconut trees as broom sticks, origami.
The shell of the coconut for old time ironing clothes and replacement for coals. Also for making utensils like ladles and spoons.
We also make coconut oils, coconut wines and a.k.a Toddy.
The sprouted coconut is something we have as a snack.

It has to get mature and turn brown like that. You would have to have access to a coconut tree. The ones in the grocery store are either husked(the typical brown coconut) or they're green and immature (water or jelly coconut). You could probably find a nursery in Florida that would send you one that's dried an mature like the one in this video. To sprout it you just put it on the ground in a warm weather environment and it will sprout like this. Home Depots in Florida or southern California sell sprouted baby coconut trees and you can have them shipped to any Home Depot during spring/summertime.

@Maureen Wareham Durians are easily available, and you could probably find some right now in the street markets or a local Asian grocery store. They are usually frozen to prevent them from smelling, but they are delicious and have a texture like custard or pudding. Lychees, rambutans, and longans are also pretty common. Dragonfruits are also easy to find, but it may not be the season right now, and you may be able to find a soursop or cherimoya, but they are less common.

The sponge is little tad old. So it looses juiciness and sweetness. Usually, the ones smaller, like half way filling the coconut cavity are the tastiest. When you taste that, you kind of reject the older ones 😅.

We also use custard to make run down(a jamaican recipe) the thing is we dont boil it till it gets too oily . When we see the custard formed if oil is in it we will pore it off i a glass bopple to cook other stuff then we continue we put escallion , thime, garlic ,peper and saltfish after the salt had been boiled out. But the salt fish is not a must if you dont have or like it. You put a little curry in it the instant you put the coconut juice on the fire . When it boils down to custsrd it will have a lovely colour.( If you are alergic its not a must its just for colouring though it adds taste too and nutritious). Thats when you start to put your onion, thime etc. If you didnt put saltfish you could just add a small amount of salt by pinching it and dropping it in dont use spon becaus it easily gets salt. As you do that you taste to get the right amount of salt to your taste then stop. This is done when the herbs you put in is cooked . If its too oily just pore off the excess . ❤❤❤
