    The actual fermentation process is what i'd like to learn. From seed to table, doing this from scratch is what really intrigues me. Although it can be easily bought at the market it'd still be cool to know how to do it. I plan on growing a couple pots of tea leaves and give it a go.

    The tea leaves that you used, were they fresh or dried? Can green tea leaves be used to or only a particular type?

      Hi , the tea leaves buds and young tea leaves are washed and steam and packed in a clay pot , set in pits and pressed by heavy weight. It takes about 3 /4 months to ferment. The leaves I uses are at this stage. We then pickle/ seasoned the tea leaves as desired, once you seasoned the fermented tea leaves you still need to let it sit for about 2 weeks for it to absorbed all the flavour. We dont normally ferment tea leaves at home we will just buy it from the shop and add seasoning . In Burma you can buy picked tea leaves that are seasoned or unseasoned. And yes if you can find fresh green tea leaves you can ferment it at home. I might even try it 😃. Hope that answer your questions.

      I bought the unseasoned pickled tea leaves from Burmese Supermarket or if you don't wnat to season it yourself you can buy seasoned ones. They have variety spicy , non spicy etc. I buy mine from www.nstfoods.co.uk.
