Sauteed Pumpkin - Touffé Giraumon (Simple and healthy veg / vegan dish)

    Sauteed pumpkin (known as 'Touffe Giraumon' in Mauritius) is a vegetarian/vegan dish. It is best eaten with roti / flat-bread and paratha. It takes little time to cook and is packed with vitamins, minerals and antioxidants. It is one of the healthiest vegetables which is also low in calorie. There are many ways to cook pumpkin, here for you sauteed version.
    Ingredients:
    Pumpkin
    1 onion (medium size is fine)
    Fresh coriander
    A pinch of mustard seeds
    1 tbsp ginger garlic paste
    1/3 water (only if needed)
    1 tsp sugar (optional)
    Salt to taste
    Curry leaves
    2 tbsp oil
