If the season has sodium nitride in it,.. it needs to marinate for 24 hours for the chemical reaction to take place otherwise it is dangerous to consume before 24 hours
We use the high temp cheese in all our summer sausage plus of course jalapeños. It’s not cheap, check around with your local processing plants the prices vary. We save almost $4.00 a pound at one of ours. That Caleb is a eating machine!!!
When I was about Caleb's age, I would help my PawPaw do sausage, thing is, we would do about that much sausage with an old hand crank meat grinder. It made for a long Sunday afternoon when I was the cranker. That sausage looks GOOD!
The flesh of the Mangalica pig is reddish, very mottled, with creamy white fat that can melt at 32ºC. It is rich in omega 3 and 6 fatty acids (polyunsaturated fatty acids) and in natural antioxidants. Therefore, it is healthier than the fat of the white pig varieties used in intensive farming, and it is even good for the heart.

High-temp cheese is made by heating the milk to a higher temperature before it curdles. This process helps create a firmer and more elastic cheese, which can be stretched or pulled into strings. Regular cheeses are made by letting the milk cool down after the curdling process has taken place.

We sell meat in McMinnville at the local tsc parking lot fri and Saturdays. Beef and pork no hormones or antibiotics just plain ole beef tone way the lord intended it to be. Keep those videos coming!
I like this idea, using all the organ meats which is very healthy meat. Exceptt I would try using Wagu beef fat. How good does this sound??? Is Wagyu beef fat healthy? Wagyu beef is extremely rich in monounsaturated fatty acids and contains all of the essential amino acids, including omega-3 and omega-6 fatty acids. It’s absolutely important to remove the plate and clean the blade and plate before the second grind.
I do that but it only come out in certain holes. Could it be the temperature is to low in the meat
Cold meat grinds better than warm meat. It might just be the grinder itself is not good for it.
