as an icelander, thank you for saying this, some people are rude towards our food. this is very archaic food and only the older generation eats most of it, not many young people do (but the dried fish and sheep head are very common still). we have a lot of delicious food too, many ways of cooking fish, puffin, reindeer, geese, very delicious soups, and more.
The thing that scares me is that this Icelandic person is an educated sane man and not a butcher or hunter by profession. But he seems so well mannered, unfettered and chill with handling all the meat and cutting the sheep's head. Honestly, if Vikings had guns, they would have ruled the world.

Oh and people did use to piss on the fish to speed up the process of Fermentation though, after all Urea is strictly non-toxic and not harmful unless consumed in ridiculous quantities.
Oh and most fish that you want to ferment, aka graving digging it down and putting it in the sand for it to ferment were pissed on, just to make sure it fermented, oh and not only that high amounts of salt was added as well. It's the good old method of making sure you have food in the winter.

But people told me SheepHeads are eaten on normal occasions.
+Fade Away I can't say for Iceland, but in Norway sheep's head is pretty normal. We don't eat it often, but like once or twice a year. It's good, I don't eat the eye though. Just no thanks on that.
