    When I was 10 I begged my mom for a cat. My neighbors cat had a litter. We took the orange tabby & named him pumpkin. He was a big boy like his dad but his tail wasn't as fluffy as your kitty. He lived to be almost 18 years old. He passed in 1989 & I still miss him.

    My husband just restored my great grandmother's Hoosier cabinet ( she was from Pheba, MS) and the flour sifter still works. It now sits in my kitchen and I love looking at it because it reminds me of her! ❤️

    My Great Grandmother made biscuits for almost every meal. But when she was told by her doctor she could only have 1 biscuit per meal. So she did exactly what the doctor said only 1 biscuit a meal. But she Warned everybody that the 1 Big biscuit in the middle of the pan was HER's !! An from what I was told, She Meant It !!! :~)

    Paula, so nice to see from this video that you are in your “mode.” I am 69 years of age. I learned to cut dough the way you have done; with a knife and fork, and then with your fingers to play with the dough and get close to a “pea size “ texture. Just to say, you are in your mode…and I am in the mode to make butter milk biscuits the way I did so long ago…that helped me get “ in touch” with my food.
    in addition, I was told that to have the oven on, place your baking pan in the oven with baking renderings (the biscuits. were to be dredged in the bacon renderings on both sides) and then baked. I loved your concentrated presence.

    My grandmother & mother always pricked the biscuits with a fork 3 times. I continue this habit. Never made them without doing this, so I don't know if the texture would be different or not! Don't want my biscuits ruined!🤣 Thank you, Paula, for continuing to do these videos.

    Next time greated the cold butter with a greater and it will mix in a lot easier and you don’t need a pastry cutter.

    We were down in Tennessee about 10 years ago (we’re from Indiana) and my husband’s grandmother taught me how to make her homemade biscuits. They’re almost exactly the same except while I’m mixing and kneading the dough my cast iron is in the oven with bacon grease getting nice and hot. Then instead of rolling them out (she rolled hers but we prefer ours dropped) I use a spoon and drop them in the cast iron. My family enjoys the crispy tops that are on the biscuit and then brushed with melted butter!

    Paula, thank you so much for sharing your home and recipes. I have been a huge fan for at least 25-30 years. My grandmother and I loved watching you and Emeril long before the fancy cameras and lights. We loved recreating some of your recipes together. My grandmother past about 10 yrs ago and watching you always brings me back to that happy place. Every Christmas morning for the last 15 or so years, we have your French Toast Casserole. My children start talking about it around this time every year. Love and Best dishes Paula❤️

    Enjoyed your video, my Mother made the best biscuits in the world, I think. She never used a recipe she just mixed them up patted them out a little & cut them. I try to make them like she did, but mine never taste like hers, think I will try this recipe. Seeing you make the biscuits brought back precious memories of my Mother making biscuits.     My Momma Knight had a big wooden flour bowl & sifter she kept it in a bag in a kitchen drawer. She never put sugar in her biscuits or cornbread. She made a/b 20 buttermilk biscuits every day of her life unless she was very sick which wasn't very often.She made the best biscuits I've ever eat. Anyone was always Welcome to eat at her house She Always cooked breakfast & supper everyday. She' had fruit trees grape vines & made jellies jams & always had honey sorghum molasses & butter to eat with her biscuits & big skillet of sausage gravy & if she cooked country ham she had red eye gravy. & eggs. I eat breakfast with her 3-4 times a week. It was always ready at 6am. She always had big veggie gardens & had pecan trees & walnut trees n her big pretty yard. She made the most Delicious Pecan pies ❣️ I LOVE watching you cook Paula. You cook so much like my Grandmother & Aunt's & my Mother which they taught her to cook. Thank You for Sharing All your Delicious cooking with us❣️♥️♥️🥰😋

      I love my paula deen air fryer. We use it alot.
      I love making those pizzas she showed one day with the naan flatbread. I fix salmon patties, chicken, grilled cheese, birds eye fried green beans, fried catfish, so many possibilities. They are so good and without all the grease. Hope you enjoy your airfryer

    My grandmother after cutting out her biscuits & putting them in the skillet, she poured just a little buttermilk into her hands, rubbed her hands together, and patted the top of all her biscuits right before she put them in the oven to bake. When they came right out of the oven she used a stick of butter leaving the paper on the bottom of the stick butter, peeling the paper off the top, and rubbed the butter right on her biscuits bottom then top! So good too!

    You put your butter in the freezer, then you use your GRATER to grate the butter in the flour then you don't need a pastry cutter.

    I just love your videos. Nothing better than a good warm homemade biscuit. A little tip I got was to put your cat iron pan in the oven for about 10 minutes before putting your biscuits in it. Grease it with butter then add the biscuits. It gives them a great crunchy bottom.

    The reason for pressing the top is to make the approximate the same height to cause them to bake evenly and not rise so high in the center is each biscuit. 😍

    Paula get you a blending fork, they're so much easier to work with than a pastry cutter. I think White Lily flower makes the best tasting biscuits.

    Family lore has it that my mother as a child (an only) went visiting with her mother and was sent out into the kitchen to play. Well, she made a “flour garden” with the flour in the Hoosier cabinet. Sifted it all out and made peaks & valleys and put her dolly in to play. This was in Alabama!

    Paula you should consider putting your baking mixes and other shelf-stable food items on Amazon. It would make it easy for those of us not near a restaurant to purchase them.

    Regarding the knuckle-prints, I saw an episode of Alton Brown (Food Network TV) and he indicated that you flatten the biscuits with your knuckles so they will rise evenly. He said if you didn't then you end up with 'dome' shaped biscuits -- something about them heating from the sides first then the middle. It's funny to hear people talk about making things a certain way and when challenged, will say, "...well that's the way grandmother made them!".

      Yes that is correct. It has to do with the CO2 and how the fat in the biscuit melts and releases, so no dome shape if you knuckle your biscuits! Kind of like the theory with puff pastry. I enjoyed watching Alton Brown because he researched the science of food....very interesting.

    County biscuits should be served with country gravy which you can entirely make while the biscuits are cooking..and pure cane ribbon syrup..and butter..of course.

    I bought a pastry fork on Amazon and it is amazing. I even use it to turn my fried chicken over in deep fat It is one of the best kitchen gadgets I have bought. I use it for other things too, and it is great for blending butter and flour. MMM the biscuits look so good.

    I remember my Grandmother making her biscuits with lard and buttermilk. They were the BEST!!! Also, if you have leftover biscuits, try frying them in your cast iron skillet with some butter. Oh...My...Goodness!!! It's awesomesauce!!!

      Absolutely! Biscuit dough is great for dumplings. And if you don't have homemade biscuit dough and you want dumplings in your soup, the can biscuits work very well too!

    Boy I tell you what there’s nothing like good old fashion classic flower mix with everything in it that you need. It’s got everything from your Saul and your making about her all the things you have to add sometimes is a little bit of baking soda I love them that it’s ready to go no just add whatever you want.     My mama rolled out her scrsos, and put cinnamon sugar on the dough…rolled it up, cut them, and we had “pinwheels”. They were sooo good.❤❤❤

    Miss Paula, your biscuits look SO Delicious!!! Soft and tall!!! Oh my, I WANT me some biscuits with butter and Mayhall jelly!!! I found it on Amazon!!! Do you know if Amazon has Curtis Syrup??? I do not have it in FL where I live. My Mama used to give us Alaga Syrup Alabama and Georgia syrup. I Have to say that I LOVE your thoughts, "don't be afraid of a biscuit. If it doesn't turn out right, just throw it away and try again another day"!!!!!!!

    Homemade apple butter and one of those biscuits would be good. Poor Eddie, IDK how he contains himself, you know he probably tries to watch his weight, and here Paula temps him cooking all this wonderful FOOD. . .

    Ms Paula....I have the answer to your question. I used to make biscuits some years ago and what used to happen was while they were baking they would rise up to a point where the air bubble inside would break and the biscuits would fall like a cake and end up looking like cookies. It took me a while but I found that if you press your thumb (or knuckle) in the top of the biscuit before baking they rise up nice and don't fall. Thank you for the video and you are just as beautiful as ever! BTW......I call my favorite kitty "biscuit head". I also use a cast iron skillet as well.
