4 Levels of Lasagna: Amateur to Food Scientist | Epicurious

- We challenged chefs of three different levels - an amateur, a home cook and a professional chef - to make their versions of lasagna. And then we brought in a food scientist to review their work. Which Lasagna was the best?
Check out the professional's recipe here on the ICE blog: www.ice.edu/blog/frank-proto-...

I want to see an episode where, after every chef finishes cooking, they all taste each others' dishes, and give their sincere opinion, and maybe share some ideas of reasonable improvement.
And I mean "reasonable" as in "you could use this kind of spice", and not "you should grow your own cows".
I was thinking about this as well. Also......Maybe have 3 people do a blind taste test and vote for the best one.
Yesssss
wdym growing your own cows is very reasonable
Frank is actually pretty good on giving out somewhat reasonable advice on ingredients: in some Q&A and Recipe Swap videos, he says that he’ll use boxed wine and American cheese in some of his recipes that he cooks.
that's a great idea, or have the food scientist do the same.

Finally, someone else that adds honey to their tomato sauce. I thought I was the only one. I always get weird looks when I say I use it. I think it works better than sugar to cut the acidity of the tomatoes.
You don't need to add sugar or honey to tomato sauce. You can add a carrot then take it out to cut the acidity and if it's not sweet that means it's not cooked long enough. Tomato sauce should take 4 hours on a simmer to make.
I add honey as well its not that unreasonable

Frank's version is more similar to our Italian lasagne bolognesi.
In some areas, people will add pancetta or lard to the minced meat, and in Naples, they also use prosciutto and mozzarella.
To be honest, lasagne can be made with anything, as the name stands for the pasta: there is lasagne al pesto, ricotta&spinach lasagne, vegetable lasagne etc... all sorts of variety!
Anyway, the original recipe for lasagne bolognesi consists of:
Onion, celery and carrots all chopped in irregular sizes (some small, some bigger);
Minced beef meat (and you may add lard and pancetta too);
Sage;
Tomato paste and tomato sauce;
Salt, pepper and perhaps even sugar, depending on how ripe the tomato is (the higher the quality of your tomatoes, the less sour they taste);
Bechamel:
Butter, flour and milk;
salt, pepper and nutmeg.
And obviously, Parmigiano!

I think it would be cool if the other levels tried each other's dishes
I agree.
İ agree too
I was thinking that !
I think they don't do that because the chef's probably aren't filming on the same day and the taste test would be compromised if one dish has been in the fridge for 3 days and the other is fresh out of the oven.
Inviting them at the same time is a bigger hassle than you'd think. Filming just one of the chefs could already take a full day of preparation and recording.
So true

Nancy Rose that and a blind tester. Because of course their gonna dislike the other food.
I said the same thing the show would be better if they did.
Ikr. Everybody would love their own food and brag but if it a blind test, I wonder how they're going to react.
the Levels 3 and 4 would tell Levels 1 and 2 some extra complains directly to their faces, but still i agree, as they would have some extra info to improve theirselves, like using no cheesecake in their pancake mix, and grandma Beth would tell that Level 3 snob not to make that ridiculous Gelatto when he was supposed to make a Sundae
Alicia Johnson i think it would be a battle of who is the nicest
I like how Frank cooks and describes everything. He must be good teacher and his meals must taste very delicious.
Well, his jacket says thst he is a culinary instructor.
I️ like how he explains it so you know you know why he’s doing extra things and not just because he’s an experienced chef and can do extra things
What you are actually seeing is his passion which is becoming very rare in our industry.
The lady's turkey lasagna sounds nice, but, I wouldn't eat due to allergy to spicy stuff and she seems happy about spicy stuff, the first guy does it like my brother would do it, and frank's lasagna is freaking awesome, bechamel? wow I gotta try it
I use Mario Batalli’s recipe for it. It’s butter, flour, whole milk, and nutmeg. You have to keep stirring and let it reduce for a while. I’ve tried other recipes but it comes out lumpy.
Please have these chiefs try each others dishes and let them rate them. Frank, your the man!
If Emily was here she’d be putting ketchup in this instead of tomato sauce
IKR
There are some recipes where you can do that though as long as you balance the added sweetness from the ketchup
IM SO THANKFUL THEY TOLD EMILY TO TAKE A BREAK BECAUSE I WOULD HACE LOST MY MIND !

Why is there that one person that has to ruin the comment section with Emily but ketchup on everything
Lorenzo would add bacon to it
@Angelica Ramirez Debbie Downer
Wow, did you just spoil this video but damn that's insane
The corner piece is a highly debatable thing for lasagna. If you prefer a slightly drier lasagna, go for it. For me, I like 1 crispy edge. If there are those that don't like crispy edges, there be at least 3 pieces along the width side.
If Garfield is an actual live cat, he'd go for all 3 in a heartbeat.
I really want to try the level 2 lasagna as I’m fascinated by the addition of berbere and honey into lasagna.
Why not just have one person actually try the three dishes?

Agreed. That was a respectable lasagna. Not my first choice due to being very bland, but still a good mild dish.
The same happened with the pizza: level 1 chef's looked best.
When adding the ricotta mix and sauce on top of the noodles, instead of adding them as 2 separate layers I mix them together on top of the noodles. Make the ricotta much easier to spread when it has the liquid sauce added to it. I use my offset spatula to make a nice even layer.
