    Meditteranean Chicken Sheet Pan
    Ingredients:
    -Boneless Chicken thighs, cut into large chunks (or whole) *If I made this again I’d do it whole so that everythign is ready at the same time but I bought the chicken already cut up.
    Chicken Marinade:
    -1/2 tbsp olive oil
    -3 tbsp plain unsweetened Greek yogurt
    -the juice of 1 large lemon
    -6 garlic cloves, minced
    -1 tbsp oregano
    -1 tbsp smoked paprika
    -pinch of salt & pepper (to taste)
    Method:
    1. Dry chicken thighs
    2. add them to a bowl with all of the marinade ingredients and mix well
    3. Cover and place in fridge for at least one hour (to overnight- the longer the better!)
    4. Take the chicken out 30 minutes before cooking to bring to room temperature
    5. During that 30 minutes, cut up whatever veggies you like. I did zucchini, eggplant, bell peppers, and red onion.
    6. Place the veggies in a big bowl, add some olive oil, salt, pepper and oregano and mix to evenly coat.
    7. Place some parchment paper on a baking tray before laying the chicken and veggies on it. Don’t overcrowd the pan (I used 2 trays)
    8. Bake at 400F (205C) for 37-40 minutes. If the chicken is cut up it will probably be ready early (~20 minutes?) so check on it and take it out before the veggies if you need to.
    9. Place evrything on one pan and add the sauce (below)
    For the sauce, blend the following ingredients:
    -3/4 cup full fat Greek yogurt
    -1 tbsp lemon juice
    -1 small garlic clove
    -salt & pepper
    handful of fresh dill (I didn’t have any it’s ok if you omit)
    Levi’s Pasta
    Melt 1 tbsp of ghee or butter to a pan over medium heat. Add 1 minced garlic clove and fry until fragrant (~30 secs). Add the pasta, stir to coat the pasta evenly with the garlic butter. Pour in some chicken bone broth or chicken broth (enough to cover the pasta). Bring it to a boil then simmer until pasta is cooked (~15 minutes). Boil some water on the side to have it ready in case all of the liquid is gone and the pasta isn’t quite cooked. You can just add water until it’s cooked to your liking. Turn off heat, add some grated parmesan and serve.
