Once when my mom was makin lasagna we ran out of the cheese when we got to the top layer, and when we do top layer its usually a coulpe noodle layers plus cheese. Kinda makes a "crust" lid to the whole thing. She looked in the fridge and all we had was some like Kraft Singles. We shrugged shingled the singles on the top and the contrast of the yellow cheese top with the white cheese in the dish was amazing and how we did it from then on!

I'm probably about to show my lasagna snob here, and maybe it's just that my family makes a distinct regional variant of it based on where our family came from, but: I've never seen anyone use straight up meat sauce for their lasagna, like Bolognese. As far as I can tell, this isn't a thing, seems like something you'd find in store bought lasagna, certainly not in Southern Italy style lasagna. The sauce and the meat are cooked separately, the meat is made into meatballs, then sliced and layered when preparing the lasagna. Same goes for the sausage if you're going to use it, it's cooked in the casing and then sliced and layered. Now this probably goes without saying, but Layna was 100% right, that texmex blend was a sin, it's gotta be mozzarella or nothing. Lastly, and this is the part that comes with the caveat of it being a regional variant, hardboiled eggs. Southern Italy style lasagna uses hardboiled eggs sliced up and layered as well, maybe it's me but I just can't think of lasagna without them in it.

Well, since I'm pretty sure Giri isn't living in Asia (from what stories she's told), she doesn't need to wash the rice, since the west doesnt use traditional rice packaging methods, and uses plastic bags and vaccum seals instead, its completely fine.

Lasagna is 10x better with whole milk mozzarella and fresh sliced parm. Most types of texmex usually use medium cheddar and 2 percent milkfat mozzarella (it's the worst quality cheap cheese for diets and shouldn't be used in the home kitchen outside of a salad or quick mexican food ya don't care about much like taco bell that ya brought home and want extra cheese for) the cheeses are a vital key ingredient to good Lasagna and italian foods in general. Our italian resturaunt would fire the chef on the spot that made food with subpar or the wrong cheeses since it might directly affect our reputation if a food critic comes through incognito. The stricter italian places would also mandate a minimum quality of a heavily aged Parmigiano Reggiano for the parm fresh grated of course. Quality can be further increased with fresh made pasta and fresh italian cultigen tomatoes crushed in the kitchen though those are actually the least important ingrediants in the mix they are still improvable. Honestly at home I'd use canned italian crushed tomatoes, dry noodles, my own selection of good cheeses and herbs though.
my wife cooked for the first and last time when she made lasagna. the only cheese she used was ricotta cheese and nothing else. i told her she was not allowed in the kitchen after that.
