When Claudine comes to visit, Jacques wants to spend the day with his daughter and granddaughter, so he turns to his pressure cooker to prepare a speedy Lamb Curry, and serves it over Rice with Raisins. To begin the meal, Jacques manages to stretch four ounces of sea scallops into a dish for four in the form of Scallop Pancakes on Boston Salad, the aroma of the cooking pancakes makes it impossible to resist tasting the first ones hot out of the pan. For the finale, Jacques transforms a tortilla and a can of apricots into a beautiful and delicious Crisp Apricot Galette.
Jacques is pure GOLD. There will NEVER be anyone like him. Can’t imagine all the good amazing food he has made for his own family over the years.
Great show. I really like that he had his daughter on with him. I appreciate KQED putting these shows on TH-cam for us to enjoy and learn from.

I have read some of the opinions lauding the pair. I would prefer to watch Jacques work alone.

I like watching the videos with Jacques' daughter. The chemistry they have is so authentic and they are so cute to watch cook together.
I'd love to have my daughter cook with me.... Life is too short not to enjoy your children's company and teach them your craft... Great job Mr. Pepin!
Gary Schultz yes I must admit guilty as charged my mom would pitch a b**** and we would fly out the door and come back in thank God and have a really good meal to eat it's only when you get older you realize exactly why your mom was snapping out for you to come to the table sit down and all eat together!!!!! Something I try to tell you all the time now.
Jacques Pepin is the best chef I have ever seen. He knows everything about everything when it comes to food preparation. I first saw him in the late 80's when he had a cooking show on PBS. He is indeed a "Master". His daughter adds personality to the episode. I like and admire them both.
It's so funny when Claudine says- "if you get me a pressure cooker" and Jacques immediately says "I'll get you a pressure cooker." Just like a good dad.
I just love his daughter, she is beautiful, refreshing, pleasant and a perfect foil for Jacque.
I love the way Jacques relates to his adult daughter. My daughter is 27 and quite the wonderful young woman. Dads will always be dads, and their daughters will always be their little princesses. Claudine, is powerhouse producer of his show... It's so obvious Pepin is proud of his daughter.
And our sons! My wonderful son is 6’3”, loves his wife, his friends, has a good job & loves to bake (got the baking from his oil’ mum ☺️).
I love to see dad cook with his daughter (almost as much as I enjoy moms teaching their sons). Intergenerational cooking - it's a beautiful thing.
I love Jacques' turn of phrase re jalapenos. "Sometime it's going to blow your mind and sometime it's pretty mild... this one... it's OK..."

I just love him cooking with his baby. She really helps in the kitchen. Does what daddy says because he will never steer her wrong. She will always be his baby no matter what age. That's how I feel about my daughter.. I love you beautiful Claudine
He’s so wonderfully French. We talk with are hands and it’s no matter if there’s a knife in your hand. Such a master. I cannot wait to start my son cooking with me.

i used to watch claudine and jacques together and i never understood their dynamic.. as I'm way older now i think their bond is beautiful. lovely father daughter dynamic. she's so proud of her dad, and you can see by the way she respects him and compliments him, and like wise!

I really enjoy watching Chef Pepin. Just found this show with his daughter and it's wonderful! That's the same vinaigrette I eat on my salads but I add chopped garlic to it. Simple and delicious. 😊

It upsets me when people talk negative about Jacques' daughter. His daughter cooks very well because her father is a true master of cooking
I love her being there because she is "us". She is the "every-man" to Jacques' mastery. Jacques reaches in to a saute pan and manipulates the food, where any normal human would use a spatula or some other tool. He spoons out a bit of food for a taste and tastes it, where Claudine has to blow on it for a bit before she can try it- just like I would, or anyone else! And then there's his tenderness with Claudine's daughter...beautiful!
@@oldarpanet Jacques often blows on his food. Being a great cook doesn't mean having a Kevlar tongue, and mouth burns from hot food are a risk factor for oral cancers.

People talk smack about Claudine, but watch her whip up a vinaigrette with no problem at all. She's a good cook in her own right. You can hear the father-daughter teasing all through the episode. She asks the questions WE would ask.
She is married to a chef who has taught in professional cooking school. I imagine she can whip up a meal.,,

Wish I could find the series where his daughter was off at college and he was showing her how to cook the basics. These are very good shows, showing to how combine fresh with prepared foods.
I always find it funny when he makes desserts with a tortilla, its like some shit a poor/stoned college student would do but jacques manages to make it beauiful and delicious every time

I just this year read his autobiography, Apprentice: My Life In The Kitchen. Touching and laced with family, love and life! Even the sad parts weren't that sad because if his contagious enthusiasm.
A wonderful book about a fascinating man.
I can't put it down. A must read for any home wannabe!! I just went down to my kitchen and sauteed Romaine in EVOO and Balsamic, finished with some parm and a pinch of turbinado, he inspired me, no recipe, just a small feel 'this is right' and my wife hammered it.
now that I'm thinking might have added a squirt or zest of lemon or lime to brighten it up. Jacques wouldn't have missed that.

I did the curry with chicken and it wonderful. Also did the apricot tart and it also was YUMMY!

Several weeks ago I saw a demonstration of the Instant Pot -- a pressure cooker, among other things -- and decided it looked interesting. I ordered one, but by the time it arrived, I decided i was afraid to use the darn thing, wondering if its going to explode or... whatever. But now I'm ready to try it. Finally. Can't quite imagine putting bananas in a cooked lamb dish, but it did look great!
You can do it! It's very easy to use a pressure cooker as long as you make sure it's closed properly..

Did the scallop pancakes, and they are excellent. Risked the blender, cause I dont have a mini food processor, and it worked. Be careful opening the club soda. Didnt even shale it, and it sprayed all over the place. Open it slowly. Got a way thicker batter than he did, even using a lot of club soda, and the pancakes spread out and still cooked thin. Used a pound of mini bay scallops, and it still seemed a small amount in the blender. This recipe is pretty idiot proof, considering my non-exact amounts in ingredients. Total cost? $5.65 for a pound of mini bay scallops. I have so much left-over batter, that I will be eating these for the next 80 billion years, lol.
algini12 yea I found with a blender in situations where you use liquid, start with a bit less initially and add the rest gradually. I cant wait to try this out.

IamDoogy just live in NYC or Philly everywhere you turn this delicious delicious delicious delicious delicious delicious food the French restaurants that you got to go to New York I have fantastic memories grow up and one I think I would have been a fat kid , people used to ask my mom do you feed her and she would get so insulted I was basically skin and bones and still but thanks to my mother and father they gave us what they could and when you do cook with love it shows nothing else is like you and I'm grateful to them especially love you Mom and Dad and wouldn't trade it for the world I think it's very endearing lovely that he's with his daughter. and know if I grow up in a French restaurant and probably would be fat just thinking about it brings me joy!!! it had to be fantastic!

It's nice to see a family-type episode. Very homey. It's even more sweet when his daughter's little daughter joins him. FAMILY is what it's all about! ZSurely she does get paid, but I wonder how much. It's be nice to know Jacques Pepin's salary for these shows.
Most cooking shows are lone chefs+occasional added guest chef where the two will co-create a dish and work sort of as colleagues, and then also there are the chef+student variety where one is master and other is obviously pupil. Here we have a chef+daughter, who has a span of knowledge of cooking not from being a professional herself but from having a father who is.. it's a little less tv-show and a little more real-life-family-interaction which apparently a lot of people do not care for.
anamiasismudge very well said, I said that very early on on a different episode that's his daughter she's not a TV personality and she spoiled with that being said she is annoying as hell and very disrespectful to her father! but when you're very rich and the European those children talk to their parents like you talkin to some stranger the street in America we don't stand for that no kind of way but if your European that is nothing but it gets on my damn nerves that's what everybody can't stand. that is exactly what everybody does not care for it may be real life but she's not that damn stupid she's just ignorant there's a difference. and she's rude. nothing you could say about that it comes through loud and clear. I must have met years ago and I saw Claudine how to make a comment here or there because I just wanted to hear her father and she didn't interrupt and almost seem disruptive and disrespectful that bothered me so only the good Lord and the walls in my home new at that time what I had said. now with that being said truthfully I was just jealous here she is with her father cooking in the kitchen enjoying that good food and being spoiled as she should have been that's what Daddy's do thank God I've never been that spoiled but nevertheless when my father was eating something I ate right off this play and not in a disrespectful way he knew what part of the steak I wanted but whatever I wanted and he gave it to me thank God however being older and wiser I know that I was just jealous inside this was totally crazy!!!!! Well, she does a great job at that.
Surely there are better chefs, but Jacques is so adept with simple ingredients and simple techniques, maximizing flavor. I have prepared many his ideas from the videos. If nothing else, Jacques will teach you how to cook an egg to perfection. He is an eggophile.

I often cook his lamb curry (using chicken) in an instant pot. I have a problem with the liquid gelling while it's coming to a boil because of the instant flour or cornstarch.
Update. I now omit the instant flour and replace it with a cornstarch slurry at the end of cooking.
One interesting thing is that my mom (she's Swedish) always tells me her grandmother would make radish the same way. Except they'd use lemon butter with the salt.

To come here and read comments how people love and respect Jacques but can't stand his daughter. You understand that you have no respect and love for him when you trashtalk his family right? His flesh and blood, his greatest creation you mocking. How would you all feel watching a clip on youtube with your daughter and when you scroll through comments all she get to see is that she is useless and annoying in all episodes. You as a father would hurt seeing your daughter hurt so use your damn brains if you have any before you say stuff that hurt the greatest chef that ever walked the earth.
Love these episodes it really feel like christmas every time. It have that cosy feeling and vibe in each episode just magical.

Pam Fridell /I agree one example is when Jacques says he will put in a couple of CUPS of garlic when he meant to say a couple of CLOVES of garlic! I have seen him many times make small missteps of the English language while cooking but he always corrects himself and never leaves it hanging. This time he is so distracted by his daughter that he has thrown off his natural rhythm and I feel this throughout the video. That is why I’d prefer to watch him cook alone he weaves in his anecdotes he has time and space to do everything and quickly. I have been in situations where it is more work to have an assistant and continually have to tell them what to do than to just do it yourself!

With today's food prices & shortages of quality veg, radishes are now expensive enough to be gourmet hourderves.
Want to live a long life, take a lesson or two from Mr Pepin, add a little exercise and enjoy life.

Not to mention that the whole concept of the show is to create fast and easy dishes anyone can do. BTW, get your children involved in cooking as early as possible (safely) so they won't be at the mercy of the fast food companies once they leave the nest!
