    Nice work. I take a shortcut...I steep various things in jars filled with inexpensive vodka (mini cucumbers and mint /raspberries and lime) for a few days and then add a splash to seltzer and ice. Works great.

    5lbs table sugar $2.50, 5.5 gal tap water $0.03, pitch on yeast cake from a cream ale $0 (or just do a trad beer yeast starter from harvested yeast), no nutrients. Flavor in the glass with torani so it's sweet ($6 ea, about 2 bottles will do it) $14.53 for 5gal, or $0.27 per 12oz serving. I also drink without flavor, then it's a Finnish kilju: $2.53 or $0.05 each. Beer is still better.

    Hi, followed this recipe and have a couple ??'s. 1. My seltzer is a little sweeter than "water" and cloudy (yellow-ish tint). Didn't look like that until I added the yeast nutrients. The gravity is higher as well, around 1.033. Do I just let it sit longer and see if the yeast keeps going (it's been fermenting for two days).

      @@marcoz2470 You can brew beer that is equal in calories, and is fully dry (so low carb), but far more flavorful. For example, a 750 ml bottle of Jester King's Le Petite Prince, an absolutely amazing beer, is about the same calories as a 12 oz Truly. Or, you can opt for an ounce of very flavorful spirits for the same calories (just avoid rums, unless you've done your research, and know which ones haven't been backsweetened).
      I'm not saying people shouldn't enjoy a hard seltzer, just that there are more interesting options that fit the profile of low carb, and low calorie. The people who seek hard seltzers generally aren't looking for challenging or interesting drinks. I think they just want something that tastes pleasant, and gives them a buzz. 🤷

      Yeah, that's what I was thinking. Not because I've tried this, but from my experience making mead. Fruit flavors often require a surprising amount of sweetness.

      Great suggestion. I think that's what was missing. A lot of the flavors we expected to like ended up being "duds" probably for that very reason.

    Probably needed to backsweeten for a lot of those flavours to hit properly. At 0.997 it's probably so dry that most of those flavours turn a medicinal/ cleaning liquid flavour.

    I've tried flavorings from many different companies. The underlying problem is the use of Propylene Glycol.

      @@ipodhty Propylene glycol is not a good taste or maybe even it could impact mouth feel. It is unnatural. I can only suggest you try something with it. I make my own carbonated (and un-carbonated) mineral waters in five gallon kegs. I had searched for lots of sources of flavorings and everything I found with propylene glycol ruined my mineral waters.

      @@ipodhty I wouldn't think that is the issue. If you can find a small bottle of any flavor with it, you'd have to just experience it. There are many places to get flavors. One in Las Vegas is called something like one-on-one flavors. There is also a better place, but the name isn't on the tip of my tongue. Once you experience it, you'll really understand it. Maybe I'm too picky, but I've probably spent between $250 and $500 to experiment with flavors for my mineral waters. I've ordered from many different sources. All have that same issue. If I could find a solution, I'd be thrilled. By the way, I'm a homebrewer. I've won 2 gold, 2 silver and 1 bronze at the California State Fair in 2020 - the last time they had a homebrew competition. I don't even drink anymore, as I'm too critical of all beer.

    Guys, I followed this recipe almost to the letter but 2 days after fermenting in the kettle and seeing plenty of fermenter activity I’m getting a bit of a green apple smell with no change in hydrometer reading. Have you experienced this on other batches?

    Aren't you supposed to let the flavoring steep in the seltzer for some time? Not sure but it seems reasonable to let it blend in with the rest of the drink naturally through time or else it'll taste harsh

    Why dont you use a lager yeast? Itll be more neutral. I find some hard seltzers taste really yeasty, almost to the point where you get nauseous

    I would like a recipe for a one gal batch of seltzer. I am just a beginner. I have one gal. jugs nothing bigger. There for I would like to start out with a one gal batch. Just expiramentting to see what wife would like

    Cool it with the editing. Hard to watch with "we add yeast, pew pew lula lula lula honk ping ping lot lot, our hot water needs to be , zonk zonk lop lop ting tong zoot zoot, we had a slight problem with keeping, bam bam (slowmo shot) bang ding. Remember the star swipe transition effect between scenes in the 90's? Don't over use it. Did not watch the whole video.

    Why does this need to be boiled? It's not like beer that utilizes the heating for hot break and getting rid of dms but just sanitary water to begin with and some salts and yeast nutrient. Better just to boil a bit of the water if the yeast nutrient needs it and just skip the boiling and cooling process and dump the rest of the ingredients to the fermenter. If you are concerned on bacteria on sugar just boil that with the yeast nutrient on normal kettle and stovetop.
